PEACH MUFFINS! 1 cup chopped peaches (frozen, fresh or canned --well drained.

I used a 16oz c can of Del Monte)1/2 cup margarine (use real butter it'll taste better!)3/4 cup 1 w white sugar1 egg at room temperature1 1/2 cup flour1 teaspoon vanilla1/2 c cup plain yogurt3 teaspoons baking powder (Crumb) 1/3 cup packed brown sugar 2 tablespoons all-purpose flour 1/8 teaspoon ground cinnamon 1 tablespoon butter

Directions: Cream (whisk) softened margarine, then add sugar and beat until light and fluffy. Add egg and beat well. Sift together flour and baking powder in a separate bowl and set aside. Beat vanilla and yogurt into creamed mixture a and stir in flour mixture. Chop peaches into small pieces, about 1/4-inch in thickness. Add fruit to mixture and stir briefly to blend. Drop by spoonfuls into well- greased muffin tins. Fill the cups 3/4 full. (Crumb) In a small bowl, mix together brown sugar, 2 tablespoons flour and cinnamon. Cut in 1 tablespoon softened butter until mixture resembles coarse cornmeal. Sprinkle topping over muffin batter in cups. Bake at 400 degrees F for 20 minutes or until nicely browned.
