Makes around 3 dozen mini cookies 1 3/4 cups all-purpose ﬂour 1/2 teaspoon salt 1 teaspoon baking soda 1 stick unsalted butter, at room temperature 1/2 cup packed light brown sugar 1/3 cup caster sugar 1 large egg 1 teaspoon vanilla extract 3/4 cup mini chocolate chips Preheat the oven to 175C. Line a baking sheet with parchment paper and set aside. In medium bowl, sift together the ﬂour, salt, and baking soda. Set aside. In a large mixing bowl cream the butter and sugars together until creamy and smooth. Add the egg and vanilla extract and beat to combine. Gradually add the ﬂour, folding until combined. Stir in mini chocolate chips. Roll the dough into tiny balls, around the size of a small grape and place on the prepared baking sheet. Flatten each ball of dough slightly with the palm of your hand and bake for 8 minutes or until cookies are golden brown and set. Remove from the oven and leave to cool on the baking sheet for two minutes. Transfer the cookies to a wire rack to cool completely.
