t India Grill, a vibrant and cheerful 24 x 7 multi-cuisine restaurant and
bar lounge at Hilton Garden Inn, Saket, Delhi, these mind-boggling
avant garde fusion dosa dishes are a part of their innovative Dosa
Fest! Like any objects of desire, these are not available for all the season
but are presented for a short period!
As We Enter
If one can give a rating, then the staff of the hotel deserve a 10/10 for being
courteous and attentive, as soon as you step in and are bombarded with attention,
in a good way, of course, you will be greeted warmly and led to the amicable dining
area and also attended to swiftly. The traditional Buttermilk or Mor is served to
refresh your body from the scorching heat outside. Soon, Ashima Manchanda, the
Assistant Marketing Communication Manger joins and greets us with a beautiful
smile and after a quick chat Executive Chef Avinash Handoo shares the table.
The down-to-earth and shy Chef explains to us about the fusion menu and says,

We wanted to do something very innovative. Dosa, as we know, is served
with chutneys and sambar but what if we serve them in a different way and
with different stufng and accompaniments. To be honest, we never expected
the kind of responses we are getting for this attempt! Just a few days back,
a man who was sitting a little far from our live kitchen, just after nishing his
dosas, came near my counter and gave me a big hug and conveyed that he
had never had these kind of dosas in his life and congratulated me on the
menu. For a chef to get that kind of compliment is heart-warming. So this
menu is well-received than we actually thought it would be.
Dosa he Dosa Literally
After a delicious and authentic Rasam served as Soup with traditional
Appalam or Papad, one has to pull up the sleeves for a dosa ride! First-
stop The Spring Garlic Prawn Dosa (`400/+), a pleasurable nuances
of the aromatic spices with tenderly cut luscious and juicy prawn esh,
sauted with mustard mornay sauce and homemade dry spices. This dish
is very promising as it instantly melts in your mouth. The best-selling item,
a semolina dosa with red and yellow caramelized onions into the batter
served with velvet chicken and gherkin popularly called the Stroganoff Rawa
(Chicken) Dosa (`325/+) is the next. For this succulent chicken mix paired
with the crunchy dosa we say- Hats off for creativity and innovation!
Next delicious stop was the - Paneer Masala Dosa (`300/+). No! It is
not the regular paneer grated on top but a crisp crepe spread served with
quintessential Punjabi Paneer Butter Masala and Mysore chutney. Yummy in
taste and a perfect amalgamation of northern and southern avours, this is
a must-try. A traditional taste can be fetched with chefs Piquant Nilgeri
Vegetable Dosa (`275/+). Heavenly for the palate and unlike the normal
rice dosa ! This is a rice and whole moong dal crepe, making it extra
crisp and is served with spicy vegetables cooked to perfection with coconut,
mint and coriander. Dont miss the Nellore Classic Dosa (`325/+) and
Amritsari Keema Dosa (`325/+). Presented as a fusion variation to the
thin, pliable and crisp rice dosa, the Nellore Classic is a sh dosa consisting
of delicate sh prepared in southern spices and the tenderness of the sh is
almost beyond a point. Absolutely tantalizing!! And the Amritsari Keema is a
lamb masala dosa prepared with minced lamb cooked in Punjabi style and
avoured with fenugreek and desi ghee. Spicy and truly Punjabi taste-wise
but with a twist!
As the afternoon wears on, plate upon plate is delivered more than you
think that you have asked for but it is food and hospitality that makes you
feel loved. Prepare to tease your senses as you devour in the Apple Crumble
Dosa (`275/+), a sweet golden crepes served with caramelized banana
and apple crumble. An unusual combination but unbeatable taste! Light on
the palate and easy on your stomach is the Sweet Treat Of Monsoon
Spice Dosa (`275/+) another hearty sweet dosa served with mango and
coconut stufng.
A few complementary add-ons can turn the classic version into more of a
meal and Im not opposed to that. I just consider it a variation on theme. This

Bengali, Gujarati, Punjabi, Goan,
Hyderabadi and Delhi among others. This
special menu will be available from August 1 -
15, 2012, at lunch (12:30 pm until 3:00 pm) and
at dinner (7:30 pm until 11:00 pm). Guest can
also be able to enjoy an interesting display of
Indian Handicrafts by the Cottage Industries
Emporium.
