Tofu Salad

14 blocks shredded tofu (One block was about or slightly more than half a pound, from what I recall.) 2 ½ c. diced red onion 1 bunch diced celery 4 c. shredded carrots 1 jar pickle relish (We used Cascadian Farms. Maybe an 6 or 8 oz. jar? Last time I made this at home I substituted some chopped pickled jalapeños, which worked well.) 1 ½ c. tahini ¾ c. grain mustard ¾ c. tamari (The secret ingredient in every classic HL recipe!) 3 T. turmeric 3 T. paprika (I think sometimes I like to use a bit more paprika and scale back the turmeric. It gets more yellow and egg-salad looking as it sits.)
