II DietaryConcerns Manyofyouwhohavepreparedfoodforourshelterguestsareawarethattherearedietary concernsamongsomeofthemen.Forthoseofyouwhohavealwayswantedtoparticipatebut areunsureaboutwhereorhowtobegintheplanningprocess,hopefullythiscookbookwillbe ofsomeassistance. Asaresultofthedifficultcircumstancessomeofthemenhaveendured,theymayhavedental issues,sobesurethefoodisrelativelyeasytochew.Also,theirconstitutionscanbesomewhat delicate.Thatsaid,youwillnoticewhenyouvisittheshelterthatthereisalwaysTabascoonthe tablestospiceupthefoodtheyareserved!Whilethisseemscontradictory,itisnotwhen consideringtheiroveralldietssomeforlongperiodsoftime.Itisgoodtobemindfulthat acidicfoodoverandoveragaincanbehardonthestomachimagineifyouatespaghettior lasagnaseveralnightsaweek!Andsometastebudshavelosttheabilitytonuanceflavors,so highlyseasoned,thoughnotnecessarilyhotandspicy,isdesired.
