that resembles a chowchow of squash. Great

8 cups sliced yellow
summer squash, cut
into ¼-inch rounds

2 fresh jalapeños

1½ tablespoons kosher
salt

1¼ cups white
granulated sugar

8 cups ice cubes

2 tablespoons mustard
seeds

2 small red bell peppers,
sliced into rings
2 cups thinly sliced white
onions

2 tablespoons pickling
salt

1 teaspoon celery salt

2½ cups white vinegar
1½ cups water

Place the squash in a colander, and set the colander
in a sink. Sprinkle the kosher salt over the squash and
then cover with the ice (this will result in a crisper
pickle). Let sit for 1 hour.
Rinse the squash thoroughly under cool running water, and drain. Pack the squash, bell peppers, onions, and
whole chiles into the jars, leaving ½ inch of headspace at
the top, and set aside.
Combine the pickling salt, sugar, mustard seeds,
celery salt, vinegar, and water in a nonreactive saucepan and bring to a boil. Reduce the heat to low and
simmer for 5 minutes.
Carefully ladle the hot pickling liquid into the jars,
leaving ½ inch of headspace in each. Cap with lids and
bands, cool for 2 hours, and then either refrigerate or
process according to the jar manufacturer’s directions.
The pickles can be refrigerated
for 7 to 10 days; if processed, they will
keep for up to 10 months.
