1-½ cups flour
¼ tsp salt
2 eggs lightly beaten
1 ½ cups milk
2 tbs melted butter

Preheat oven to 425F
Sift together the flour and salt and beaten in the eggs, milk and butter to make a smooth
batter. Beat with rotary beater 3mins. Fill hot buttered muffin cups two thirds full with
this batter and bake about 30mins.
Try not to open the oven until the muffins pop and brown.
