Forks Over Knives

THE PLANT-BASED WAY TO HEALTH
Edited by Gene Stone
Foreword by T. Colin Campbell, PhD,
and Caldwell B. Esselstyn, Jr., MD
What if one simple change could save you
from heart disease, diabetes, and cancer?
For decades, that question fascinated a small
circle of impassioned doctors and researchers—
and in 2011, their research made headlines in
the hit documentary Forks Over Knives. Their
answer? Eat a whole-foods, plant-based diet—
it could save your life.

This charmingly illustrated guide to
the lost art of logic is a must-have in
the age of the internet!
Anyone in the habit of holding opinions needs An Illustrated Book of
Bad Arguments, the only book of cute animals that Mr. Spock would
want in his personal library. This one-of-a-kind introduction to logic
reveals the nonsensical arguments that crop up everywhere from
congressional debate to YouTube commentary—such as the false
dilemma (You’re either with us, or with the fanatics!) and the appeal
to ignorance (It had to be a spaceship; no one can prove it was
anything else!).
Drawing inspiration from such diverse sources as Lewis Carroll
and Carl Sagan, author Ali Almossawi strikes the perfect balance
between substance and whimsy. It’s the antidote to fuzzy thinking—
with furry animals!
u An oh-so-giftable guide to logic,
with 19 irresistible illustrations
u For philosophy majors, fans of
Jon Stewart and Stephen Colbert,

Go Vegan!
125 RECIPES THAT PROVE YOU CAN
LIVE WITHOUT CHEESE, IT’S NOT ALL
RABBIT FOOD, AND YOUR FRIENDS
WILL STILL COME OVER FOR DINNER
Kristy Turner
“I couldn’t live without cheese.” “Tofu doesn’t taste like
anything.” “You can’t bake without butter or eggs.” These
statements have two things in common: 1) They’re kneejerk
excuses to avoid cooking and eating vegan food. 2) They’re
totally wrong! But convincing a veggiephobe takes more than
words—it takes proof.
In But I Could Never Go Vegan!, rising vegan star Kristy
Turner good-humoredly counters every possible omnivore’s
dilemma—with recipes whose appeal cannot be denied. Each
chapter tackles a new excuse not to go vegan: Think it’s all
rabbit food? The BBQ Bacon Burger proves it’s not. Don’t
want to give up chocolate, ice cream, or pizza? Then don’t!
Enjoy Hazelnut Chocolate Mousse Tart, Dulce de Leche
Ice Cream, or Roasted Garlic White Pizza with Macadamia
Ricotta.
Throughout, full-page photographs show just how inviting
vegan cuisine can be, and Turner’s warm tone and easy-to-
follow recipes keep readers tuned in. No need to nag—the
food says it all.

Tempeh Bacon Mac n’ Cheese with Pecan Parmesan
SERVES 8 TO 10
C
auliflower is one of those “wonder veggies.”
It’s so versatile that even those who claim
to destest cauliflower can usually find at least
one way they enjoy it (my stepdaughter is a great
example of this!). When cauliflower is roasted,
it brings out strong nutty undertones and when
it’s pureed, it is immediately disguised as a milky
cream. Cauliflower (along with a little bit of ca-
shews) is what brings the creamy richness to this
recipe for a classic comfort food. Mac n’ cheese is
definitely at the top of the list when it comes to
soul-satisfying meals, and roasted cauliflower pu-
reed with cheesy nutritional yeast and zingy miso
takes this favorite up a notch. With the addition of
smoky tempeh bacon, this recipe becomes a com-
plete meal, full of cheesy goodness.
for the mac n’ cheese
½head of cauliflower, cut into
florets
olive oil spray
½+ ¼ teaspoon garlic powder,
divided
¼ teaspoon smoked paprika
salt and pepper to taste
½cup raw cashews, soaked in water
for at least 1 hour, water dis-
carded
1½cups almond milk (or nondairy
milk of your choice)
½cup nutritional yeast
3 tablespoons lemon juice
1½tablespoons tomato paste
½tablespoon Dijon mustard
2 teaspoons white miso
½teaspoon onion powder/granules
½teaspoon turmeric, optional
1 pound elbow macaroni
1 recipe of tempeh bacon crumbles
(page 000, see variation)
for the pecan parmesan
3 cups pecan pieces
1 cup nutritional yeast
1½tablespoons fresh lemon juice
1 teaspoon minced garlic
1. Preheat the oven to 400°F. Line a baking sheet with parchment
paper or a silicone baking mat. Spread the cauliflower florets out
onto the baking sheet and lightly spray with olive oil. Sprinkle the ¼
teaspoon of garlic powder, the paprika, and salt and pepper to taste
over the florets. Toss to coat. Bake for 20 minutes, flipping once
halfway through. Once the cauliflower is tender and golden, remove
fromthe oven and let cool for a couple of minutes.
2. In a blender or food processor, process the cashews and al-
mond milk until smooth and creamy. Add the cooled cauliflower,
nutritional yeast, lemon juice, tomato paste, Dijon mustard, miso,
onion powder, and turmeric. Process until smooth. Set aside.
3. Reduce the oven heat to 350°F. Lightly spray a 9 x 13-inch cas-
serole dish with olive oil spray and set aside.
4. Bring about 8 cups of water to a boil in a large pot. Once it is
boiling, add a pinch of salt before adding the pasta to the water. Stir
immediately to prevent any of the pasta fromsticking together. Let
the pasta cook following package instructions until al dente, then

We live in a golden age of paleontological discovery—the
perfect time to dig in to the spectacular world of dinosaurs.
From Aardonyx, a lumbering beast that formed a link between
two- and four-legged dinosaurs, to Zuniceratops, who boasted
a deadly pair of horns, Dinosaurs—The Grand Tour details
everything worth knowing about more than 300 dinosaurs.
The important discoveries and gory details touch on topics
from geology, anatomy, and evolution to astronomy and even
Native American and Chinese myth. Fascinating facts abound:
Ÿ Giganotosaurus was longer, two tons heavier, and had
bigger jaws than T. Rex.
Ÿ The poison-spitting Dilophosaurus from Jurassic Park
wasn’t actually venomous at all.
Ÿ Because of its bizarre single-clawed hands, scientists now
believe Mononykus was a prehistoric predecessor of the
anteater!
Illustrations on virtually every page, true to the latest findings,
bring these prehistoric creatures to life in all their razor-sharp,
long-necked, spiny, scaly glory.
“Remarkably all-encompassing and superbly illustrated
. . . a fascinating tome that will appeal to children and
adults.” —Huffington Post

The most famous and earliest-

which describes a characteristic of all
pterosaurs. A hugely elongated fourth
finger supported a skin membrane

Rachel Sumner and Ruth Mitchener
Fun and easy playtime “recipes” that
use household items to engage all five
senses, for children ages two and up
Rachel Sumner and Ruth Mitchener created Recipes for Play for
parents—and anyone else with a child in their life—who want to
encourage tactile learning but don’t want their kitchen, living room,
or porch overtaken by chaos. Recipes range from Yogurt Paint to
Bubble Blow Darts and call for non-toxic, natural “ingredients” most
of us already have—think flour, rice, lentils, tape, ice cube trays,
ribbons, drinking straws, and sofa cushions. (The authors even give
homemade alternatives for items like food dye.) At-a-glance icons
show how each activity engages children’s sense of sight, hearing,
smell, taste, or touch, and every recipe comes with simple setup and
cleanup instructions!

little Picassos in front of the fridge or easel and marvel at
their creativity. If you’re concerned for the health of your

Tis paint will dry and it is possible to keep the art for some
time, provided the yogurt isn’t applied so thickly that it rots.
Both your fridge and the foor should wipe down quickly,
or let the dog in and get it to do the work for you. If your
darlings paint themselves more than the surface you’ve
provided, you can always have them help you clean the
dishes, getting a headstart on bath time in the process.
YOGURT PAINT
Tere is a lot to love about yogurt paint. It is perfect for the child who wants to put
everything in their mouth and the parent who doesn’t want the fear factor of giving
young children real paint. It wipes clean easily although, like most paints, it is not too
friendly with carpets. If you’re looking for a window of time to cook a meal, take your
postcards of the fridge and let the kids paint the door.

The Call of the Farm
AN UNEXPECTED YEAR OF GETTING
DIRTY, HOME COOKING, AND FINDING
MYSELF
Rochelle Bilow
A spirited memoir of farming and
cooking, love and self-discovery, by a
rising-star food writer
It began as a simple assignment: Profile a small “full-diet” farm in
central New York. At most, food writer Rochelle Bilow expected to
come away with a cute city-girl-in-the-country piece. But just one day
on the farm gives Bilow so many reasons to stay—the creamy taste
of raw milk, the back-breaking satisfaction of stacking hay bales, and
the irresistible charm of a certain freckled farmer—that she simply
can’t leave.
The Call of the Farm recalls Bilow’s four seasons on the farm,
where she learns to care for livestock, grow vegetables, and, as the
designated cook, prepare the farmhands’ communal meals—almost
exclusively from their own produce. But it’s not just an agricultural
love story, as Bilow sensitively portrays the arc of her passionate
romance with that freckled farmer—one that burns perhaps all too
brightly (and all too fast). Honest, self-aware, and wonderfully tender,
The Call of the Farm will speak to anyone who, while opening their
CSA box or browsing a farmers’ market, has paused to daydream
about farm life—and anyone who has fallen too deeply in love.

455 grams Bread Flour Blend (page 000)
(about 3½ cups)
1 teaspoon xanthan gum1
3 teaspoons quick-rising yeast
4 teaspoons baking powder
½ teaspoon salt
1 tablespoon organic cane sugar
1/3 cup grapeseed oil
3 Flaxseed Eggs (page 000)
1 cup warm water
1. Spray a 9 by 4 by 4-inch loaf pan with
cooking oil.
2. Mix together the four, xanthan gum,
yeast, baking powder, salt and sugar in a
medium bowl.
3. Blend the oil, faxseed eggs, and water to-
gether in a large bowl, using a mixer on
medium speed, about 30 seconds.
4. Slowly add the dry ingredients and mix
on medium-low until combined. Increase
the speed to medium-high and beat for 2
minutes. The dough will stick to the sides
of the mixing bowl. See page 000 to learn
more about bread dough.
5. Scoop the dough into the prepared loaf
pan, spread it to the sides of the pan us-
ing a spatula, and then use wet fngers to
smooth the top.
6. Let the bread rise for 25 minutes in a
warm, moist spot. Preheat the oven to
375°F. Allow the bread to rise for another
5-10 minutes while the oven preheats.
There should be about one inch clearance
to the top of the pan when the dough is
fully risen.
7. Bake at 375°F for 37-39 minutes until the
internal temperature is 200-205°F. Re-
move the bread from the pan promptly
and transfer it to a cooling rack. Let it
cool completely before slicing.
FREEZING:
Any bread that you don’t plan to use within 2-3
days can be frozen in airtight bags for up to 6
months. I recommend slicing before freezing so
that you can remove slices as needed. Once fro-
zen, bread will be best toasted.
SUBSTITUTIONS:
If you are allergic to faxseeds, choose Chia Seed
Eggs (page 000) or Ener-G egg replacer (see
page 000) to replace the Flaxseed Eggs in this
and other yeast recipes.

Melissa King
An all-in-one guide to making almonds,

creamy milks, velvety butters, and
satisfying, whole-food treats—a must-
have for anyone nutty about nuts
Nut milk has gone mainstream. It’s low-cal, nutritious, tastier than
dairy milk, and preferred among non-dairy milks. But store-bought nut
milks contain unnecessary additives and sweeteners, and those that
don’t will cost you extra. The same goes for nut butters—everyone

Green veggies galore—with all their
benefits—made delicious in every meal
from breakfast to dessert
Blogger and food writer Jessica Nadel thinks greens are too healthy
and important for people to avoid just because they “don’t like” them
or don’t know how to cook them. In Greens 24/7, she introduces 43
green vegetables—not just the leafy ones!—and makes it easy to
eat them with every meal. From classics like broccoli and zucchini,
to superfoods like kale and chard, to unconventional greens like
spirulina and kelp, these veggies can be found in supermarkets, in
farmers’ markets, and might even come as a surprise from your CSA!
This comprehensive cookbook leads off with in-depth nutritional
profiles and preparation guidelines for every veggie, and follows
up with more than 100 vegan recipes that taste great and pack
a nutritional punch, such as Kale and Herb Cornbread Muffins,
Zucchini Noodle Bolognese, and Chocolate Hazelnut Avocado Torte!
u Solves the problem of “I know I
should eat more greens, but I’m
bored with salad!”
u Recipes are inspired by cuisine
from India, Japan, Mexico, Italy, and
elsewhere
u Eight green smoothies and half a
dozen things to do with kale
u Each recipe comes with a complete
nutritional breakdown
u A whole chapter of desserts sets this
apart from the competition
JESSICA NADEL writes the popular blog
Cupcakes and Kale. She has a passion for healthy,
local, plant-based eating and thinks that in a diet
of vibrant, nourishing meals there is room for a
cupcake or two, as well. She is also the proprietor/
baker at Oh My Bakeshop, a natural and organic
bakery of special-order vegan goods. She lives in
Ontario, Canada.

CHOCOLATE SUPERFOOD SMOOTHIE
Wake up to the taste of the tropics with this super easy and very healthful breakfast. If

Survival of the Nicest
HOW ALTRUISM MADE US HUMAN AND
WHY IT PAYS TO GET ALONG
Stefan Klein
Translated by David Dollenmayer
Now in paperback: Internationally
bestselling science writer Stefan
Klein argues that selfishness is self-
defeating and proves the evolutionary
advantages of altruism
Stefan Klein overturns the idea that “survival of the fittest” hinges
on competition, with robust evidence that homo sapiens who were
willing to cooperate actually enjoyed better odds—and still do! It
turns out that caring for others can protect us from loneliness and
depression, make us happier and healthier, reward us economically,
and even extend our lives.
“An enticing storyteller, Klein marshals the evidence for the
value of altruism.”
—Roald Hoffmann, Nobel Laureate, poet,
and Frank H. T. Rhodes Professor of Humane Letters
Emeritus, Cornell University
“Mind-bending . . . if there is a science to winning over
readers, Klein has surely mastered it. . . . The wealth of
knowledge here is astounding.”
—Publishers Weekly, starred review
u Now with an all-new preface by the
author
u Draws nimbly from a wide range of
disciplines, research studies, and
many aspects of contemporary life
u Makes sparklingly clear how
and why both cooperation and
competition are driving forces of
evolution
u For readers of Charles Duhigg’s The
Power of Habit, David Brooks’s The

An essential climate-debate handbook
that puts the irrefutable science
supporting human-caused climate
change at your fingertips
Have you heard that global warming is simply the result of natural
cycles? Or that scientists are split on whether humans are affecting
the climate?
More important, do you have a firm grasp of the science that
emphatically refutes these claims? The evidence exists, and it’s long
been decisive, but do you know your science well enough to have it
at the ready the next time you’ve been put on the spot by a climate-
change skeptic?
At last, this is the handbook to end the debate—here to prepare
you with not only science’s strongest arguments but also the best
ways to deploy them to change skeptics’ minds. Seth Darling and
Douglas Sisterson, energy and climate researchers and science
communicators, dismantle all the most pernicious misconceptions
with easy-to-understand explanations so that, once and for all, we
can agree that climate change is a real and significant threat to our
well-being, and then start to do something about it.

Seth B. Darling and Douglas L. Sisterson
u Concise and authoritative—

SCIENCE, AND LORE OF EVERYTHING
FROM AGAVE NECTAR TO XYLITOL
Alan Barclay, PhD, Philippa Sandall,

Foreword by Jennie Brand-Miller, PhD
An all-in-one reference with everything
you need to know about sugars and
sweeteners—for any sweet-toothed
consumer who also craves the facts
Modern supermarkets and natural food stores stock seemingly
endless sugars and sweeteners. The stunning variety can also be
daunting—and all the conflicting information and opinions about
sugar don’t help. Consumers are left to wonder:
Ÿ Which sweeteners perform well in baking?
Ÿ Will the kids notice if I sub in Stevia?
Ÿ What’s the best pick if I’m watching my waistline, blood sugar,
or environmental impact?
Ÿ Are any of them really superfoods . . . or toxic?
Answers to these questions and more appear in this thoroughly
researched, comprehensive, and down-to-earth guide. Alphabetical
entries on sugars and sweeteners familiar and new mingle
with nutrition facts, myth-busting Q&As, trivia about history and
production, substitution tips, and info on sweeteners’ performance in
cooking and baking. Your sweet tooth is in for a real education!

Nothing
SURPRISING INSIGHTS EVERYWHERE
FROM ZERO TO OBLIVION
A book from New Scientist
Edited by Jeremy Webb
Incredible discoveries from the
fringes of the universe to the
inner workings of our minds
It turns out that almost nothing is
as curious—or as enlightening—as,
well, nothing. What is nothingness?
Where can it be found? The writers
of the world’s top-selling science
magazine investigate—from the big
bang, dark energy, and the void to
superconductors, vestigial organs,
hypnosis, and the placebo effect:
u What came before the big bang,
and how will our universe end?
u How might cooling matter down
almost to absolute zero help
solve our energy crisis?
u Why is it unfair to accuse sloths—
animals who do nothing—of
being lazy? And more!
