+4 thin slices mozzarellacheese
+4 thin slices Emmental cheese
+4 slices vegetarianham
+4 organic eggs
+1 tbsp oliveoil
+1 tbsp organic butter
+2 tbsp applecider vinegar
+1 tbsp parsley, chopped finely
+freshground pepper
+sea salt

1. Add1L waterto asmall saucepan and heat to alowboil.
Addtheapplecider vinegar and carefullycrackin 2 eggs
and cook for afewminutes, until set and poached to your
liking. Transfer to aplate covered withkitchentowels.
Repeat thesame stepwiththeremaining 2 eggs.
2. Bringafrying panto medium-highheat, thenaddtheolive
oil andfrythehamslices for afewminutes oneach sidetill
lightbrownand crisp. Removefrompanand set aside.
3. Butter one side of each sliceof bread. Addthestacked
cheese slices to thepan (2 slices mozzarellaand 2 slices
Emmental per person) and placethehamslices and bread
ontopwiththebuttered sideup. Frytill thecheese is crisp,
thenturn thesandwiches over and cook thebreadtill crisp
and brown.
4. Put each sandwich, cheese sideup, onadinner plate.
Place 2 poached eggs ontopof each. Lightlysaltand
pepper theeggs, garnish withparsleyandserve withroast
potatoes, if desired.
