Beddis Blue - British Columbia - From Moonstruck on Saltspring Island, this semi-soft blue cheese is made from Jersey cows. It is aged for 4-6 weeks. It is a delicious and intense blue cheese. cows feed on hay from the salt marshes of the islands. The single variety of cows (with low volume production and high quality milk) and the salty grasses give the milk a distinctive flavour.

GrosseTomme du Grosse-Ile (Unpasteurized) - Quebec - This cheese is a light cream coloured cheese with small air holes. It provides full and rich dairy taste with a sharp edge.
