HOSPITALITY FINANCIAL MANAGEMENT (HTH 581)

COURSE PROJECT (GROUP PROJECT) GUIDELINES

Project Topic
Students are required to study the Sources of Fund, Uses of Fund, Financial
Performance Measurements, and Financial Performance Improvement
Methods/Strategies of a food & beverage operation. The food & beverage operation
must be approved by the lecturer first. The following areas should be covered.
1.

Overall introduction of the F & B operation (Establishment, target market,


seat turnover, average check, promotion. etc.).

2.

Menu Selections and Innovations of the F & B operation.

3.

Sources of fund for start-up and for day-to-day operation (Example, own fund,
bank loan, etc.).

4.

Uses of fund of the organization (Example, purchases of food & beverage


inventory, day-to-day operating expenses, bank loan repayment, etc.)

5.

Financial Performance measurements of the F & B operation (Examples:


average check, turnover, gross margin, operating income, income b4 tax.
Employee productivity, etc.)

6.

The challenges and issues of the F & B operation. (Special attention is given
to the effect of GST and the devaluation of Ringgit and How the
organization reacts to the situations)

7.

Methods and strategies used by the F & B operation to face the challenges,
solve financial problems and improve financial performance. (Examples:
Price increase, cost cut, promotion, accurate forecast of sales, etc.)

8.

SWOT analysis of the F & B operation.

9.

The current and future F & B trends. (Look at the whole industry NOT the
individual organization)

10.

Recommendations and suggestions

Project Rules
1.

There should be 4 students in a group. Since group members will have to


work closely together for the whole semester, students are advised to choose
their teammates carefully. It is every students responsibility to make sure
every team member give his due contribution. Neither changing members nor
changing teams is allowed.

2.

Students are expected to follow the schedule and work on the project
progressively. Last-minute work will only result in unsatisfactory grades or
even failure of the subject.

3.

Honesty is a must in doing the project. All work must be genuine and original.
No plagiarism will be tolerated.

Report (CD)
Project report in soft copy (CD) shall be submitted on or before the deadlines.
The CD should include the following

1. Once confirmed kindly register your F & B operation with the class rep as soon as
