Fried Rice
***Pre boil 1 cup of rice and cool in the fridge overnight*** Ingredients 1 cup Frozen vegetables ½ Capsicum, diced 6 Eggs, fried and diced Cooking oil Salt 2 Celery stalks, diced ½ cup Spring onion, chopped 6 Rashers of bacon, fried and diced Soy sauce Sesame seed oil

*Fry frozen vegetables lightly in oil then add capsicum and celery and fry until cooked *Add pre-boiled rice, salt, sesame seed oil and soy sauce and mix together *Add spring onion before turning off heat *Place on serving tray and sprinkle with egg, bacon and small amount of spring onion

Carbanara
***Pre boil 1 packet of pasta tubes or spirals*** Ingredients 1 tbs Garlic, crushed 1 cup Cream 3 tsp Chicken booster 2 cups Mushrooms, sliced Salt ½ cup Bacon, diced 1 ¼ cup Chicken stock 1 ltr Milk Cooking oil

*Fry garlic and bacon in oil *Add cream and chicken stock and allow to boil *Add milk and chicken booster and boil further *Add mushrooms and salt to taste *Mix with pre boiled pasta and serve

Vegetarian

*Boil tomatoes with salt and pepper *Add chicken booster, chicken stock, milk and cream and boil further *Toss in sun dried tomatoes, olives and baby spinach *Mix with pre boiled pasta and place on tray * Sprinkle with spring onion

Bolognese
***Pre boil 1 packet of pasta tubes or spirals*** Ingredients 1 tbs Garlic, crushed 1 cup Tomato, crushed 1 tsp Chicken booster Salt 1 ¼ cup Chicken stock 500g Bolognese sauce (pre made) Spring onion, chopped Oregano

*Fry garlic in oil *Add chicken stock, crushed tomato and Bolognese sauce and allow to boil *Add salt and oregano *Mix with pre boiled pasta and place on tray *Sprinkle with spring onion

Lasagna
***Prepare a day before and bake in the morning*** Ingredients Lasagna sheets Mozzarella cheese Blanchamel sauce 500g Bolognese sauce (pre made) Parmesan cheese ¼ cup chicken stock

*Place enough chicken stock and Bolognese sauce to cover base of tray *Place lasagna sheets on top, cover with Bolognese sauce and sprinkle with mozzarella cheese *Repeat process until you have 4 or 5 layers finishing with lasagna sheets on top *Pour blanchamel sauce on top and sprinkle with Parmesan cheese *Bake in moderate oven until cooked

Bolognese Sauce
***To be used in pasta and lasagna, pre-made and stored in the fridge*** Ingredients Oil 2 ½ kg Mince Meat 1 Capsicum, shredded 250gm Tomato paste Bay leaves Salt 2 cups Carrots, shredded 5 lge Onions, shredded 1 cup Celery leaves, shredded 1 ltr Water Oregano Pepper

*Fry mince in oil *When brown add onions, carrots, capsicum and celery leaves *Fry slightly then add water, tomato paste and bay leaves *Add oregano, salt, pepper and boil for 4 to 5 hours

Blanchamel sauce
***To be used in lasagna, made and used immediately*** Ingredients ¼ Tub of margarine 1cup Flour ½ ltr Milk ½ tsp Chicken booster Salt Pepper

*Stir together over heat until thickens

Hamburger Mince
Ingredients 2 ½ kg Beef, minced ½ kg Breadcrumbs 300g Flour 5 Eggs Salt ½ cup Oil Splash of water (if required) 3 Onions, minced Paprika Pepper

*Mix all ingredients together *Separate into 3 or more batches and freeze or use as required

Potato Salad
***Cut Potatoes into quarters and boil, allow to cool prior to using*** Ingredients Potato Mayonnaise Mustard seeds *Mix all ingredients together *Place on serving tray

Vinegar Spring onion, chopped Salt/pepper

Lebanese Meat Pizza
Ingredients Filling 4 Onions, diced ½ cup Oil 1 tsp Pepper ¾ cup Yogurt 2 tbs Brown vinegar 5 Tomatoes, diced

½ kg Minced meat 1 tsp Salt 1 tsp Cinnamon 2 tbs Tahini Pine nuts

*Sauté onion in oil and then add meat *Fry for approx 2 minutes *Add, salt, pepper and cinnamon *In a separate bowl, mix tahini, yogurt and vinegar together and then add tomato *Place meat mixture on top and mix Dough 4 cups Plain flour 1 cup Milk, lukewarm 1 Sachet yeast 1 tsp Salt 2 cups SR flour ½ Cup oil Water, lukewarm

*Mix yeast and milk and leave aside for 5 minutes *Pour mixture over remaining ingredients and mix well *Use water as required to form mixture into dough *Place dough onto bench and roll out into ½ cm thickness *Cut out rounds the size of a saucer *Place 2 tbs mixture and a sprinkling of pine nuts on each round *Let settle for 30 minutes *Heat oven to 220 degrees *Place on oiled trays and bake until golden brown

Vegetable Burger
Ingredients 1 kg Carrot, shredded 1 kg Potato, shredded 1 kg Zucchini, shredded 10 Cups Breadcrumbs ½ cup Salt Oregano 1 kg Onion, shredded 1 kg Pumpkin, shredded 12 Eggs, beaten 200g Wheat flour 3 tsp Pepper

*Mix all ingredients together and form into patties

Sausage Rolls
Ingredients 3 kg Sausage mince (pre mix) 1 kg Carrot, shredded 750g Breadcrumbs Salt Egg, beaten 700g Onion, pureed 250ml Soy sauce 2 tsp White pepper Pampers puff pastry Oil

*Fry onion in oil and sauté *Add carrots, mix, then take off heat *Add breadcrumbs, pepper, salt and mix well with hands until well combined *Add soy sauce and sausage mince and mix together *Freeze or refrigerate until required *It is best to make 1 day prior to use *Make a stencil out of cardboard approximately the size of the sausage roll *Lay pastry out and mark out with stencil *Place a strip of mixture near the top of pastry *Brush some egg on opposite side and roll pastry over until closed *Prick the top of the sausage roll with a fork *Repeat process until all mixture is used *Place sausage rolls on tray and brush with egg *Bake in a pre-heated oven at 250 degrees for approx 18 minutes, turning tray around half way through

Chicken Marinate
Ingredients Vegetable Oil Soy Sauce 1 tsp chicken booster *Mix all ingredients together Sesame Seed Oil Bicarbonate Soda Water

Chicken Stir Fry
Ingredients 3 Breast fillets, sliced Garlic 2 Carrots, sliced 2 Broccoli, chopped 2 Cups water Oil 2 Onions, cut into 8 pieces ½ Capsicum, chopped roughly 2 Sachets beef in black bean sauce powder 1 Cup chicken stock

*Marinate breast fillets overnight, then grill strips and put aside *Fry garlic in oil, then add onions and sauté *Add carrots and capsicum and fry *Add chicken stock and bring to the boil *Place broccoli in pot and add sliced stems as well *Mix beef in black bean sauce powder in water and add to mixture *Simmer until stock is reduced then add sliced chicken
