ALL AROUND WISE, Decatur, Texas, Thursday, January 1, 2009

GARDENER’S MAILBAG
should use to treat it during the winter? That’s a fungal disease that does present a clear danger to St. Augustine. It kills the roots, and the grass then weakens and dies. It definitely is more common in cool weather, especially in the spring. Texas A&M research has shown that spreading a 1-inch layer of Canadian peat across the lawn will stop the spread of the disease. However, that application should be made in late March or April, not during the winter. Conventional fungicides are not effective. You can see the results of such an application by looking at my Web site, www.neilsperry.com and clicking through to the Most Asked Questions/lawns. The before-and-after photos are of my own St. Augustine. Dear Neil: We have an ugly building behind our back fence. What screen would be least expensive? It has to stay beneath the power lines that run across the area. The wood fence is 5 to 6 feet tall. What about witchhazel? The various witchhazels are deciduous shrubs, so they won’t do much screening for 4 to 5 months each year. You’d be better served by one of the hollies that grow to 6 to 12 feet tall. Choose from regular Burford, Willowleaf (also known as Needlepoint), Nellie R. Stevens, Mary Nell and its red-holly hybrids, also regular yaupon. Of the batch, Nellie R. Stevens is probably your best combination of speed and good looks. Waxleaf ligustrums and elaeagnus are other candidates. Dear Neil: I accidentally watered my Bradford pear with a mixture containing a weedkiller last year. It survived, but its growth was sickly. Do you think it will recover? There is just no way to know. Only time will tell. It depends on a lot of variables, not the least of which is the type of weedkiller involved. Some are much more persistent than others. The tree’s original vigor plays a part, as does its age. The average life expectancy of Bradford pears is probably 10 or 12 years. They have such bad branch angles that the trees end up self-destructing by splitting down their trunks by that age. Rather than doing a lot of heroic things to it next spring, the vote here would be to replace it if it’s still looking puny. A new tree would give you good shade faster. If you do make the change-out, consider a different type of tree. Dear Neil: Texas A&M and the Extension Service (in one of their bulletins) recommend using a 3-1-2-ratio fertilizer every 10 weeks starting in spring. We have 100 homes in our development, and several of us have to hire the crew that will feed the lawns. We have to go out for bids. What should we require? The only way to know exactly what your lawns need is to have soil tests run on them. You could probably sample from 10 representative lawns to see if there are trends. Please check the print date of the brochure. That sounds like what A&M was suggesting 15 or 20 years ago. Many of their more recent soil test results have prescribed all-nitrogen plant foods. In either event, you should specify one that has half or more of its nitrogen in slow-release form. (Good for you for following A&M’s advice. The state’s best information comes from their research.) ! Have a question you’d like Neil to consider? Mail it to him in care of this newspaper or e-mail him at mailbag@sperrygardens.com. Neil regrets that he cannot reply to questions individually.

By NEIL SPERRY Dear Neil: I planted my first gardenia in September. I used the planting mix recommended for our area and I have fertilized it every two weeks all fall and into early winter. Should I prune it at all now? No. Any reshaping you do of gardenias should follow the main spring bloom, and it should only be as-needed to maintain good plant form. Anytime a gardenia suffers winter damage you can also prune back the dead twigs in late February or March. In fact, if you fear that your plant might be harmed by cold, cover it with lightweight frost cloth or an old sheet. Either would prevent wind burn as well as trapping warmth from the soil. Otherwise, just keep it moist this winter. It does not need any additional fertilizer until it starts growing next spring. Dear Neil: I have a serious problem with Take All Root Rot in my St. Augustine. Is there anything I

WISE NOTES
By TANYA DAVIS Wise Co. Extension Agent “Do you have a kinder, more adaptable friend in the food world than soup? Who soothes you when you are ill? Who warms you in the winter and cools you in the summer? Soup does its loyal best. You don’t catch steak hanging around when you’re poor and sick, do you?” This quote comes from Judith Martin, better known as Miss Manners, and it directs us to think about soup and its benefits. Soup is warmth and comfort, security and strength, simple and flavorful. With contemporary accessories like food processors, blenders and slow cookers, soups are beginning to qualify not only as down-home cooking, but as practical, fast foods. The aroma of a simmering soup or stew can restore your spirits, and soups and stews are great when made ahead because their flavor improves overnight. Deanna Sagaser, county Extension agent in Hale County, shared the following information concerning

der results. Make sure the spoonful you taste is relatively cool. If it’s hot, you won’t be aware of its real flavor. Sometimes just letting a soup sit for half an hour can improve it, so when you aren’t happy with your dish, walk away from it, then come back and taste again. Many soups take DAVIS on a richer taste if refrigerated for a day to give the flavors time to blend and develop. You can store soup in the refrigerator up to three days. Most soups freeze well, especially thick gumbos, chilies and stews. Be sure and place soups and stews in small enough containers so that it will chill promptly in the center of the mixture. Package soups and stews in pint or quart plastic freezer containers or zip top freezer bags. Be sure to label them with the recipe name, date and amount. Freeze soups Continued on page 6

soups and stews. To make good soups, you need more taste than skill. The recipes you follow are only guides. Even if you follow a recipe and it is painstakingly detailed, the soup will never be exactly the same twice. The moral of this story is you must taste what you are cooking often. Don’t forget the food safety issue; always use a clean spoon. Adjust the dish by adding more salt, pepper, spices or herbs. Mustard, sugar, Worcestershire or soy sauce, red wine, bouillon cubes, drippings from a roast or a tiny bit of ground cloves to improve broths. Stews and chilies typically have a tomato base and lots of meat. The pieces of meat and vegetables in a stew are generally larger than in a soup, and the mixture is considerably thicker. Don’t cheat on the simmering time on stews. The long, slow simmer helps extract maximum flavor and ensures fork ten-

OBESITY IN CHILDREN
Obesity in children is often defined as body weight that is at least 20% higher than a healthy weight for a child of the same height, or a body fat percentage above 25% in boys or above 32% in girls. Obesity is now among the most widespread medical problems affecting children and adolescents. About 15% of adolescents ages 12-19 and children ages 6-11 are obese according to the American Obesity Association. Childhood obesity represents one of our greatest health challenges, and the number of obese children is expected to continue to increase. Obesity has a profound effect on a child’s life. Obesity increases a child’s risk of numerous health problems, and it also can create emotional and social problems. Obesity in children is of special concern to many parents. A BETTER CERVICAL CANCER TEST
While the traditional Pap smear is an effective screening tool for cervical cancer, it produces more “false positives” than health experts would like to see. A false positive test may suggest that a woman has potentially dangerous pre-cancerous changes when, in fact, she does not. The main reason for the false positives is that the human papilloma virus (HPV) that causes cervical cancer often disappears spontaneously. To counter the problem of false positives, a research team recently combined a Pap smear with a simple test for a protein called P16INK4A, which provided a biomarker showing cell changes that indicated a woman likely has precancerous lesions. The refined test helped identify 88% of women with cancer-causing lesions with far fewer false positives. Cervical cancer symptoms often go unnoticed because they mimic so many other ailments; symptoms include painful urination, heavy discharge and irregular bleeding. However, it’s very important to note that cervical cancer often presents no symptoms. If you are experiencing these cervical cancer symptoms, please see a doctor. He or she will most likely perform a pelvic exam and may order further tests. For further information about anything discussed in today’s column, call WISE OBSTETRICS & GYNECOLOGY P.A. at 940-626-8008. Our office is conveniently located at 1713 South FM 51, Ste. 201, Decatur. New patients are welcome. Cervical cancer, the second most common type of cancer in women, occurs in an estimated 500,000 women worldwide annually.

BUSINESS BRIEFS
Garrett Creek names new sales director
Jennifer Wasserman has been named director of sales and marketing at Garrett Creek Ranch Conference Center in Paradise. Wasserman is a certified meeting professional with 20 years of resort and properties experience. “Jennifer’s skills are a terrific addition to the Garrett Creek Ranch team,” said Jaynie Schultz, ranch vice president. “Her knowledge of the hospitality industry combined with her gracious style and leadership abilities will help take us to the next level of professionalism.” Wasserman comes to Garrett Creek from the Hilton Bella Harbor on Lake Ray Hubbard where she served as director of sales and marketing. Wasserman replaces Debra Williams, who has joined Schultz in a new business, Retreat Central, the sales and marketing arm of camps and other seasonal facilities to enhance off-season revenues.

EDUCATION BRIEFS
Albright makes donation
Saint Jo Rodeo Queen Lynzie Albright made an $850 donation to Wise Area Relief Mission just in time for Christmas. Albright raised $600 and received $250 from the National Wild Turkey Federation to go along with her donation.
Cory Sims said the convenient location of Weatherford College’s Education Center in Decatur was what first drew him in. “But once I started talking with the counselors and teachers here, I knew that I had made the right decision. Everyone from the director of the center to the maintenance staff is extremely kind and helpful.” Cory’s heading to another North Texas community college soon to finish his nursing program and hopes that he finds the same “caring” attitude there. “WC staff actually care about you as a person and your academic pursuits. That’s been the boost I needed.”

Realtors provide Christmas party
Members of the Greater Denton/Wise County Association of Realtors hosted a Christmas party for residents of the Nelson’s Children’s Center, a residential treatment center for kids who have come from abusive households. The realtors hosted fundraisers to raise money to provide each of the 55 to 60 children with a Christmas stocking filled with gifts, candy and a gift card.

Foster gradutates
Ashton Foster graduated with honors from the University of North Texas in Denton on Saturday, Dec. 13, with a bachelor of science degree in interdisciplinary studies and a teaching certificate for prekindergarten through fourth grades. She is a 2004 Paradise High School graduate and the daughter of Rendi Foster-Sellens of Fort Worth.
