800 g (1 lb 12 oz) beef brisket, cut into
4 pieces
5 pink peppercorns
5 black peppercorns
3 cloves
2 bay leaves, torn in half
1 large white onion, quartered
3 garlic cloves, lightly crushed
1 teaspoon salt
1 tablespoon white vinegar
For the dressing:
125 ml (4 fl oz/½ cup) extra-virgin
olive oil
juice of 2 limes
2 tablespoons white wine vinegar
1 small red onion, thinly sliced
2 teaspoons dried oregano
1 teaspoon sugar
To serve:
cos (romaine) lettuce leaves
10 g (¼ oz/¹⁄³ cup) coriander (cilantro)
leaves
½ red onion, thinly sliced into rings
4 hard-boiled eggs, quartered
2 tomatoes, quartered
2 radishes, thinly sliced
tortillas (see page 72) or tostadas

Place all the ingredients for the beef
in a deep saucepan over a high heat,
adding enough water to cover the
meat. Bring to the boil, skimming any
residue that comes to the surface.
Reduce the heat to low and simmer
for approximately 3 hours or until the
beef comes apart easily with a fork.
Drain and allow the meat to cool, then
pull strands of the meat apart and
place them in a bowl. Cover the bowl
with plastic wrap and place in the
refrigerator until ready to serve.
Place all the ingredients for the
dressing in a small jar and shake until
well combined.
To assemble the dish, arrange the
beef on a serving platter that has been
lined with the lettuce leaves. Scatter
the coriander and onion rings on top.
Arrange the hard-boiled eggs, tomato
and radish slices around the meat.
Serve with tortillas or tostadas.

450 g (1 lb/3 cups) strong flour, plus extra if necessary
14 g (½ oz) dried yeast
1 tablespoon sugar
1¼ teaspoons salt
250 ml (8½ fl oz/1 cup) water

Sift the flour directly onto a work surface. Spread the flour out a little and add the dried
yeast, sugar and salt. Mix thoroughly with your hands, adding the water a little at a time,
bringing the mixture together and working the dough until all the water is added. The
dough‘s texture should be a little dry.
Keep working the dough, kneading for a few minutes until it is pliable, smooth and
does not stick to the work surface or to your hands.
Shape the dough into a ball, place it in a greased bowl, cover with a clean tea towel
(dish towel) and leave to rest in a warm spot.
Preheat the oven to 180°C (350°F).
Once the dough has doubled in size, after about 1 hour, cut it into 8 portions and
shape the teleras into log shapes. With both hands, flatten the sides a little. The centre
will bulge, but that‘s okay. This will give the telera its original shape when cooked.
Place the teleras on an oiled baking tray and bake them in the oven for 20–25 minutes
or until golden. Allow them to cool on a wire rack before adding the fillings (see
opposite page for suggestions).

Blueberry and spelt galette
with almond milk custard
Part of the beauty of a galette (a French tart consisting of a flat, round, flaky crust
with a fruit topping) is its versatility – you can top the base with any summer berries
or stone fruit. Its rustic charm also makes it a very forgiving pastry to make, and
using spelt flour in place of regular flour adds a little extra earthiness in flavour.

Spelt shortcrust

Using oil in place of butter makes it easier and
quicker to bring the pastry together in the
humidity and heat of summer, when pastry making
can be a sticky situation. The almond milk custard
adds a creamy touch when serving, but is lighter in
flavour and consistency than traditional custard.

250 g (2¼ cups/9 oz) spelt flour
2 tablespoons raw caster sugar
½ teaspoon salt
125 ml (½ cup/4½ fl oz) sunflower oil
2 tablespoons iced water

Spelt shortcrust

Blueberry filling

1. Combine flour, sugar and salt in a large mixing
bowl. Make a well in the centre and add the oil.
Using a fork, mix the flour mixture into the oil
until it is well combined and has the texture of
small peas.

300 g (1½ cups/11 oz) fresh or frozen blueberries
1 tablespoon arrowroot powder (or cornflour)
1 teaspoon lemon zest
2 teaspoons lemon juice

2. Sprinkle over the water and mix into the dough
with your fingertips. It should be moist enough
to just bring together – the drier the pastry the
flakier the crust.

Almond milk custard
500 ml (2 cups/18 fl oz) almond milk
1 vanilla bean, split and seeds scraped
4 egg yolks

3. Using your fingers, bring the dough into a ball.
Turn out onto a floured surface, flatten dough with
a rolling pin and shape into a disk. Wrap in cling film,
then transfer to a plate and refrigerate for at least
30 minutes.

2 tablespoons arrowroot powder (or cornflour)
60 g (¼ cup/2 oz) raw sugar

Blueberry filling
1. While your pastry is chilling, combine blueberries,
arrowroot, lemon zest and juice in a mixing bowl
and toss thoroughly and gently with your fingers
to combine.
