BUKO PANDAN SALAD

BUKO PANDAN is a favorite Filipino dessert served in almost every kind of party and on every special occasions
Ingredients:
1 and a 1/2 cup young coconut strips (Buko)
5 ounces condensed milk
8 ounces table cream or all-purpose cream
3 ounces powdered gelatin
1 and 1/4 cups water
6 drops Buko Pandan flavoring (available in Asian Stores)
2 scoops vanilla ice cream (optional)
1/2 cup small tapioca pearls, cooked (optional)
Cooking Procedure:

1. Combine water and powdered gelatin then stir using a spoon.


2. Add Buko Pandan flavoring then stir until everything is evenly distributed.
3. Heat a saucepan and pour-in the mixture. Bring to a boil while continuously stirring.

Ingredients:
2 cups sweetened garbanzos, drained
1 cup sweetened beans, drained
1 cup red kaong, drained
1 cup green nata de coco, drained
1 cup sweetened macapuno
1 250ml NESTL All Purpose Cream
Halayang ube (optional)
NESTL Cornflakes (optional)
Procedure:

Combine, garbanzos, beans, kaong, nata de coco and macapuno in a bowl. Toss withi NESTL All Purpose Cream.
Set aside to cool in the refrigerator.
To assemble, arrange on a salad bowl or a serving plate.
Top with halayang ube and NESTL Cornflakes before serving if desired.

Recipe 1

Ingredients:
1 package vanilla instant pudding
2 cups cold milk
1 package Oreo Cookies, Crushed
1 cool whip (12 ounce) (large)
Directions:
Mix the instant pudding and the milk together.
Crush the Oreos; stir into the pudding.
Fold in the Cool Whip. Refrigerate until thoroughly chilled prior to serving.

Mangoes, peeled and pitted
Plain yogurt

Here's a nice salad drink for Noche Buena :
INGREDIENTS:
5 cups Shredded coconut
2 cups sweetened Nata de Coco
2 cups Sago (optional)
1 1/2 cup condensed Milk (more if desired)
1 cup evaporated milk or whole milk
1 teaspoon Vanilla extract
8 cups Ice (more if desired)
DIRECTIONS:
Put all the ingredients together in a large bowl then mix thoroughly.
Add the ice.
Serve Chilled.

Mango, Banana and Coconut Milk Smoothie


Ingredients:
1 banana
2 ripe mangoes
400 ml light coconut milk
zest and juice of 1 lime
1 pinch cardamom seeds, pods and husks removed, seeds pounded
1 handful ice cubes
a little lime zest
freshly ground black pepper
Method:

Peel the banana and roughly chop it.


Skin the mangoes, remove the stones and roughly chop the flesh.
Put the fruit in a food processor or liquidizer and blend together with the rest of the ingredients.
Make sure you blend the mixture really well, then pour the fruit smoothie into a tall, chilled glass.
Sprinkle over a bit of lime zest and some freshly ground black pepper.
