BUKO PANDAN is a favorite Filipino dessert served in almost every kind of party and on every special occasions
Ingredients:
1 and a 1/2 cup young coconut strips (Buko)
5 ounces condensed milk
8 ounces table cream or all-purpose cream
3 ounces powdered gelatin
1 and 1/4 cups water
6 drops Buko Pandan flavoring (available in Asian Stores)
2 scoops vanilla ice cream (optional)
1/2 cup small tapioca pearls, cooked (optional)

Step 1: Add Ice
Add your two tumbler glasses of ice to the blender.
Step 2: Coffee
Add you cup of coffee to the blender. Wait till the coffee has cooled so it doesn't melt your ice.
Step 3: Sugar
Add your 3 Tbsp of sugar, or to taste.
Step 4: Milk
Add cup of milk to blender.
Step 5: Xanthan Gum
Add just a pinch to the blender.
Step 6: Blend Ingredients
Blend all ingredients until ice is completely blended.
