Our chef

All our pizzas are prepared by professionally
trained chef and pizzaolo Elia Tavernese,
who has 30 years working experience and is
a true Italian who believes in traditional pizza
making and follows all the main rules of the
Italian Pizza Association.
He makes all our pizzas by hand, using fine British
Organic flower and leaves the dough for natural
fermentation for at least 24 hours. The pizzas are
then baked in a traditional wood burning oven above

• We use electricity from wind and hydro farms.
• All our packaging is made from recycled materials.
• We source environmental materials for our shop.
• We try to use only eco friendly appliances.
Our goal is to keep our carbon footprint as low as
possible so that no nasties come close to our food and
we continue being as kind as possible to our planet.

MOZZARELLA
We are very proud of the Mozzarella cheese we use on our pizzas
and in our salads, it comes from the Alham Wood Farm in Somerset
and it’s the best mozzarella that we ever tasted!
DOUGH
Bacheldre Watermill Artisan Millers, Their grain is organically grown
and they always purchase the highest quality grain available. The
Soil Association certifies their entire production process from start to
finish ensuring high quality.
MEAT
Highlander organic foods – a high quality organic butcher.
The farm is in the Black Mountains over the historic borough
of Dinefwr in rural West Wales.
