Siklamat atau asam siklamat atau cyclohexylsulfamic acid (C6H13NO3S) sebagai pemanis buatan
digunakan dalam bentuk garam kalsium, kalium, dan natrium siklamat. Secara umum, garam siklamat
berbentuk kristal putih, tidak berbau, tidak berwarna, dan mudah larut dalam air dan etanol, serta
berasa manis. Siklamat memiliki tingkat kemanisan relatif sebesar 30 kali tingkat kemanisan sukrosa
dengan tanpa nilai kalori. Kombinasi penggunaannya dengan sakarin dan atau asesulfam-K bersifat
sinergis, dan kompatibel dengan pencitarasa dan bahan pengawet.
Kajian Keamanan
Pemberian siklamat dengan dosis yang sangat tinggi pada tikus percobaan dapat menyebabkan tumor
kandung kemih, paru, hati, dan limpa, serta menyebabkan kerusakan genetik dan atropi testikular.
Informasi yang dikumpulkan oleh CCC (Calorie Control Council) menyebutkan bahwa konsumsi
siklamat tidak menyebabkan kanker dan non mutagenik. Pada tahun 1984, FDA menyatakan bahwa
siklamat tidak bersifat karsinogenik.
Pengaturan
JECFA menyatakan siklamat merupakan bahan tambahan pangan yang aman untuk dikonsumsi
manusia dengan ADI sebanyak 11,0 mg/kg berat badan. CAC mengatur maksimum penggunaan
sakarin pada berbagai produk pangan berkisar antara 100 sampai dengan 2.000 mg/kg produk. Kanada
dan USA tidak mengizinkan penggunaan siklamat sebagai bahan tambahan pangan.
