Kale Salad







Equal parts of Kale, Spinach & Romaine
Green Peppers – To Taste
Onions – To Taste
Craisins
Nuts – Walnuts, Almonds or Sunflower Seeds
Protein – Quinoa, Chicken, etc.
Dressing – Olive Oil/Balsamic Vinegar or Vinegarette

Kelly’s Smoothie
Measure by 3rds of the whole blending container – and adjust for taste preferences
- 1/3rd full of blueberries (Optional* frozen)
- 1/3rd full of sliced strawberries (Optional* frozen)
- Remaining 1/3rd is a mix of:
Orange juice/frozen orange slices
2 to 3 handfuls of Kale leaves (not stems)
½ an avocado sliced/diced/mashed/whatever
- Optional* a scoop of protein powder

Before blending, add water or any type of 100% fruit juice (such as prune, cranberry,
etc.). As you blend, add more as needed for the desired thickness.

Jason’s (Going Green) Smoothie
½ cup water
1 cup green grapes
½ cup fresh pineapple chunks, core included
½ medium banana peeled
2 cups fresh kale leaves (or spinach)
½ cup ice cubes

Kale Chips
1 bunch kale
1 teaspoon seasoned salt
1 tablespoon olive oil
Directions:
Preheat an oven to 350 degrees F. Line a non insulated cookie sheet with parchment paper.
With a knife or kitchen shears carefully remove the leaves from the thick stems and tear into bite
size pieces. Wash and thoroughly dry kale with a salad spinner. Drizzle kale with olive oil and
sprinkle with seasoning salt.
Bake until the edges brown but are not burnt, 10 to 15 minutes.

Heat a large soup pot over medium-high heat. milk. Simmer until kale is tender.
