SINGLE BARRELS
At 11 years of age and cask strength, this is the style of rye that put hair on
your grandpas chest. One of the things we love about Whistlepig is that it is as
unapologetically rye as rye can be. Its a bold, slap-you-around to make sure
youre still paying attention, rye. More importantly, its the style of rye that our
whiskey-drinking culture was built on--that which would have been found in
Pennsylvania, Maryland, and New England in the 1800s. Most Kentucky rye
has a lot of corn in the mashbill to help take the edges off ryes inherent brute
mentality. Not this though.. time in the barrel mellows this old man out.. This is
one of the best single barrels of anything that has come through our doors.

This one is like stepping on a lego, barefoot, in the middle of the night on the
way to the restroom. Aged approximately 6 years, this is our anti-bourbon,
bourbon. Iodine and medicinal herbsthe kind that people used to think
would cure them, but really wouldnt. Dried peaches, rusty paint cans, and
pecan pralines (new orleans-style, not Mexican-style). On the finish, its all
Werthers original. The last thing it does, is the best thing it does. This is the
bourbon that asks a lot. You have to go to this bourbon, it doesnt come to you.
On the nose, this bourbon is that red box of yellow Golden Maid raisins, wet river
rocks, green hay, and freshly turned garden soil. The palate though is a beautiful
example of what weve come to expect from high quality, modern bourbon.
As it finishes, the yellow golden raisin-thing changes into a Thai pickled plum
situation. The dried fruit is amazingly persistentgrapes specifically, making
this the most cognac-nuanced bourbon of all our house barrels. Tie this one up,
put a bow on it, and call it a day.
Aged 10 years, 5 months. On the nose, this one is Christmas trees and magical
f*cking reindeer. Low-grade milk chocolatethe American stuff; juniper berries
and pink peppercorns. Its got amazingly high minerality: crushed granite and
limestone. The palate is more reminiscent of antique bourbon: Absinthe-style
licorice, eucalyptus, and spearmint. At 120 proof, it will put hair on your chest.
There is no doubt that this one needs some water as it is not a slight bourbon.
Persistent charred oak, chile pequin, and a great citrus-thing happening with
lemon and grapefruit, which certainly softens the edges. This is your grandpas
bourbonmaybe even his grandpas bourbon. In spite of its powerful nature, it
has a lot of nuance. Take some time in between sips.
Each year at Eight Row Flint, to commemorate all the amazing proprietary
barrels of bourbon we have received, we reserve a bit and blend it to create
something truly special. Once blended, the bourbon enters a previously-used
cask to continue maturing. This years cask is from Lewis Dixon, of Cruz de
Comal Winery in central Texas. Formerly housing 100% blanc de bois sherry, this
bourbon will rest for several months before being released.

Maize (or Corn) has been the backbone of Americas food culture for centuriesbefore
colonists even landed in New England. Puritan settlers, while assumably straight-laced
teetotalers, still enjoyed their hooch and imbibed often. Corn, introduced to them by
Native Americans, became the most readily-available fermentable grain.
The namesake for the new joint, 8-Row Flint Corn is likely believed (although
undocumented) to be the variety of corn that was first ground into a meal, then mashed,
fermented, and distilled into American whiskey. Dent corn, grown in the South, is now
the industry standard
for making bourbon.
In the late 1800s, 8-Row Flint was taken to Italy where it became known as Otto
File. There, Otto File became polenta-kind of a big-deal Italian foodway. Despite its
unmatched flavor, terribly low yields caused 8-Row Flint to become extinct in America
until Glenn Roberts at Anson Mills re-introduced it to New England farmers, with the
help of the Italians. It is still widely grown in Italy and preferred because of the massive
amount of flavor, protein and starch it packs.
