ummertime is here, which means it’s a time for making a splash in the pool

S and enjoying the outdoors. We have some light and refreshing recipes to keep
you going during summer time.

COOL AND CRISP CHICKEN SALAD


This recipe is ridiculously simple but is the perfect complement to a toasty Lincoln
day. The celery and apple add a delicious crunch to the sandwich.
INGREDIENTS:
• Two cooked boneless-skinless chicken breasts, diced
• Half of a red onion, diced
• Two celery stalks, sliced and then diced
• One medium red apple, cored and diced
• Four tablespoons mayonnaise or Miracle Whip (you can use more if you like,
depending on your preference)
• Salt and pepper, to taste
• Eight slices of the bread of your choice
PREPARATION:
Combine the first six ingredients in a large bowl until they are evenly mixed and
