Bavarois Of Chocolate And Almonds

1/4 cup Whole Milk LA LECHERA
2 units cinnamon bough
1 tablet Chocolate NESTLE Family Black 200g, chopped
1 1/2 teaspoon gelatin or grenetine powder without flavor
2 units separated egg yolks and whites
1/2 cup toasted and chopped almonds
2 tablespoons sugar

1.-In a saucepan over low heat, heat LA LECHERA Milk with cinnamon sticks and
melt the Black NESTL Family Chocolate along with the unflavored gelatin.
2.-Shake vigorously until all is mixed and dissolved.
3.-Pass through a fine strainer and reserve. Meanwhile, beat the yolks with sugar at
medium speed, until they are creamy and add to the previous preparation.
4.-Add also the chopped almonds.
5.-Beat the egg whites to snow and gently incorporate them with a spatula.
6.-Divide into six individual wet molds and place in the refrigerator until set. When
ready, demold and serve.
