In the spirit of competition, let the war for ground beef begin. Last night, Eureka!Burger was home to TasteFresno's I HAVE FOUND BURGER Tweetup. We were there, aiming to see the newest addition to Fresno's burger haven. Let's just start with this: competition is ﬁerce. Fresno will soon be the battle ground of three big burger joints: Five Guys, The Habit and Eureka! Up until now, I believed that The Habit had a lock on Fresno as the most inventive and different chain to come through the city. Today, my mind is more opened. Eureka! puts up a challenge to the Habit. With very concoctive and inﬂuenced burgers and a very sizable list of craft brews. In fact, the beer list could be called Fresno's Beer List with Breadth. Last night, the bar was packed (as it should be, given its choice).

After the launch of The Habit Burger Grill (Fig Garden) and Eureka!Burger (Palm and Nees), there has been an imminent Burger War in Fresno. For the Cupcakes: • 1 pkg white cake mix • 1 pkg vanilla instant pudding mix (4 serving size)
• 2-3 lb. Tri-tip • 2 heads of garlic • El Mexicano Carne Asada seasoning salt (can substitute with Pappy's) • Garlic Powder

Mix the dry ingredients in a large bowl with a wire wisk. In a small bowl mix the wet ingredients until combined. Add the wet ingredients to the dry ingredients. Mix on low for 30 seconds, then on medium for 2 minutes. It makes a really thick batter, so you have to spoon it into the mufﬁn tins. Also, it sinks a bit after it comes out of the oven, so ﬁll the mufﬁn tins almost to the top. Bake according to the cake mix box. While the cupcakes are baking, make the frosting. Using a mixer ﬁtted with the whisk attachment, whip the cream cheese and butter on medium-high speed until combined and airy, about 2 minutes. Mix in the lemon zest, lemon juice, and vanilla. With the mixer on low speed, slowly add the powdered sugar. Allow the frosting to chill for 15-30 minutes in the refrigerator. After the cupcakes have cooled completely, apply a generous amount of frosting to each one (I mean it!). Top with 3-4 Skittles® pieces and grab your stretchy pants! You're gonna need 'em.
• 1/2 pkg pink lemonade Crystal Lite • 3 large eggs • 1/2 tsp vanilla extract • 1/2 tsp lemon zest • 1 cup sour cream • 1/2 cup water • 1/3 cup oil For the Frosting: • 1 8-oz pkg of cream cheese, softened • 1/2 cup butter, softened • 1/2 tsp lemon zest • 1/2 tbls lemon juice • 1 tbls vanilla extract • 1 cup powdered sugar • 1 pkg Skittles®
• Trim all fat off of the Tri-tip. Peel and ﬁnely chop 1 head of garlic. Roll the tri-tip in the garlic. • Knead the garlic into the meat surface with your knuckles or a meat tenderizer. • Sprinkle surface with garlic powder & season salt. Set meat aside. • Start barbeque. I prefer charcoal. I also put a brick in with the coals. It helps keep a consistent cooking temperature. • Grill tri-tip, ﬂip every 10 minutes. Sprinkle garlic power & season salt after 1st 2 ﬂips. • Put remaining head of garlic on the grill to roast. • Grill tri-tip to medium rare. Will be ﬁrm to touch. • Slice perpendicular to the grain of the meat. • Serve with a clove of roasted garlic.
Preheat the oven according to the directions on the cake mix box.
