BREADS AND BAKING 91 Date and Orange Oat Cookies The fragrant aroma of orange permeates the kitchen when these cookies are baking. Orange is a classic partner with dates and both add a richness to the crumbly oat biscuits. INGREDIENTS Makes 25 150g/502/% cup soft dark Brown sigar 150g/502/10 tbsp vegan margarine Finely grated rind of 1 unwaxed orange 150g/S02/1% cups self-raising wholemeal flour, sifted 5mil/1 tsp baking powder 75g/30z/% cup medium oatmeal 75g/30z/'4 cup dried dates, roughly chopped Preheat the oven to 180°C/350°F/ Gas 4. Line two baking sheets with greaseproof paper. Place the sugar and margarine in a bowl and beat together until light and fluffy. Mix in the orange rind. Fold in the flour, baking powder and oatmeal. Add the dates and mix until combined. 3 Place heaped tablespoonfills of the mixture onto the baking sheets, spacing them well apart to allow the mixture to spread. Bake in the oven for 15-20 minutes until golden. Leave to cool slightly, then transfer the cookies to wire racks to cool completely.
