Recipe Lemon pie (Lemon Pie Recipe)

- 1 disc homemade dough foot, your favorite recipe
- Sugar 300g
- 1/2 teaspoon salt
- 350cc water
- 8 tablespoons cornstarch
- 80cc water
- 4 eggs, separated whites and yolks
- 125cc lemon juice
- 2 teaspoons lemon zest
- 3 tablespoons butter
- 1 pinch of salt
- Sugar 100g
- Preparation: 45mins
- Cooking time: 15mins
- Ready in: 1 hour
- Preheat oven to 180 C (moderate).
- Grease and flour foot plate.
- Extend the pie crust and line the mold. Bake and cook 15 minutes or Until
browned slightly.
- Allow to cool completely.
- In a saucepan, mix 300g sugar with salt and 350cc of water.
- Bring the fire and boil.
- In a small bowl, mix cornstarch With 80cc of water to form a paste.
- Gradually Incorporate the caceola With boiling water and sugar, stirring
Constantly Until thickened.
- In another bowl, whisk together the egg yolks With the lemon juice.
- Add to mixture, mix and put back the fire Until it boils and Thickens.
- It is Important to stir all the time.
- Once thickened, remove from heat and add the zest and butter.
- Mix and let cool.
- In a large glass or metal bowl of, beat the egg whites with a pinch of salt to snow
- Add sugar and beat Gradually rain as stiff peaks Until.
- Place the filling over the dough and cover with the remaining meringue.
- Bake and cook 15 minutes or Until just browned meringue.
