restaurant menus. But just
because theyre a hearty root
veggie doesnt mean they
dont need careful treatment: Tey can
run the gamut from steamed and bland
to deliciously roasty and caramelized.
Well-roasted beets can be eye-opening,
chef Josh Habiger says. A lot of chefs use
beets as a really colorful ingredient that
brightens up a plate. But if you dont do
the ingredient justice, you could be ruining
it for that person forever.
Te distinctive avor of beets lends itself
to simple preparations. You can make a
salad of roasted beets and vinegar; you
dont even need to add oil, he says.

something altogether
dierent during my
trips to Southeast Asia. Tere
I kept stumbling across toast
places, where a piece of bread
becomes an elegant dessert.
Shibuya Honey Toast is
particularly popularpillowy,
butter-rich bread thats block-
cut, toasted, and topped with
ice cream. Its my starting point
for these recipes.
Ive also come to believe that
black pepper is a better com-
panion to sugar than it is to salt;
it provides a welcome spike of
avor without muddying other

wave at high for 7 to 8 minutes. let the corn cool slightly, and then
remove husks and silks; they come right o cleanly and eortlessly.
you can also try this for a showier reveal: cut o the fatter base end of
the corn. hold the cob by the top, where the silks come out, and give it
a squeeze. the pristine cob will slide out cleanly. brush with a little
