beginnings with only a single operation founded in Pretoria, South Africa in 1993; the company has grown
exponentially which led us to start franchising in 1998. We have been continually expanding and have become a
household name the world over ever since.

Our quick service restaurants specialise in the traditional way of serving healthy and spicy, flame grilled chicken,
prepared as authentically as it was mastered by the Portuguese hundreds of years ago. The recipes we use for our
meals and sauces have been passed down through generations and are still our best kept secrets. Our original
flavour is unsurpassed and after centuries, still satisfies the most discerning palate.

This introduction to Barcelos Flame Grilled Chicken is to show that it meets all
international standards and has proven success, with patrons enjoying
the Barcelos flavour in 16 countries around the globe.
Overview
• Barcelos commenced business in South Africa in 1993 and has seen successful growth for the past 20 years and to date boasts 108
outlets in sixteen countries.
• The founders of the brand, namely Costa Mazzis, Johan van Eyk and Beverley Vaskys, are all still actively involved in the daily
operations of the company ensuring continuity and excellence throughout the brand.
• The group has its offices in Centurion, South Africa as well as national distribution centres in Cape Town, Durban, Johannesburg and
in Gaborone, Botswana. It also has a service office in London.
• The group’s internal logistics and distribution network ensures delivery of licensed product from its manufacturing facilities to each
outlet in South Africa and such licensed products are shipped to all international outlets.
• The group ensures that all staff training adheres to highest standards and training is done at its in-house training academy in
Johannesburg. It is conditional to all franchisees and staff both local and abroad that training is carried out under the watchful eyes
of the franchisor.
• Ongoing site visits in every country are carried out by the franchisor, at least biannually, ensuring that standards are met and
maintained as per the Barcelos specifications
• The company currently employs in excess of 1800 staff and instills ongoing high standards and expectations from all staff at head
office and stores alike.
• The company has also achieved Halaal status for its product with two respected Halaal bodies in South Africa namely The Judicial
Muslim Council of South Africa and The Islamic Council of South Africa. This undoubtedly gives our Muslim customers the comfort that
all product consumed in Barcelos is certified Halaal.

• In house Design Teams and Project Managers take care of turn-key establishment of Barcelos outlets in all markets. This is done in
conjunction with country partners to ensure that effective and relevant designs suit the markets where the stores are situated.
• Menu planning and design is done by experience, taking taste profiles on certain meals from each country. Slight menu adjustments
are done to accommodate the local palates, complimenting the core menu and the Barcelos taste.

The Barcelos footprint clearly indicates the popular demand for this product and its founders and team have high
aspirations to expand the Barcelos taste to every corner of the globe.

dining/quick service restaurant industry.
With our identity rooted in culture, tradition and history, the Barcelos brand has captured the imagination of consumers from a diverse range of
cultures whilst offering a relaxed and convenient dining experience.
Today, the Barcelos group boasts franchised outlets in 16 different countries, so it is clearly evident that we have mastered the recipe for

Our Menu
The Barcelos menu has been carefully balanced so as to satisfy patrons in need of a quick bite through the take - away menu as well as catering
for a full family dinner in the seated restaurant area. Barcelos offers a choice of four primary spicy flavours of marinade to enjoy.

Our marinades are blended from a variety of tantalising spices combined with various strengths of Peri-Peri spices, fresh chillies and also the
infamous Bird's Eye Chilli. Patrons have a choice of Tangy Lemon, Mild Peri, Veri Peri and for the super daring and hot spirited individuals, we also
offer our famous Supa Peri marinade.

Our specialty chicken products are marinated for a period of 24 hours prior to being char-grilled on open flame gas griddles to absolute
perfection before being served.

The Barcelos chicken burgers have also proven to be one of the most popular meals on the menu. Using pure chicken breast fillets in combination
with the Barcelos marinades served on a fresh hot bun undoubtedly makes this product a must for the hungry.

A variety of other meals such as kebabs, shawarmas, crispy fries, garlic rolls, stir-fries and salads conclude a full and exciting menu. A kiddies
meal section is also included in the menu.

Our menu consists of a wide variety of meals and we also cater for vegetarians and children.
We try and maintain a healthy dietary balance by serving lean flame grilled chicken, combined with various
salads and side orders. Our spicy Barcelos sauces are an additional delight which can be added to the meal of choice.
Planning & Design
Barcelos has created an all round system whereby the complete setup of new outlets is handled by experienced in-house contract teams. All
layout drawings and designs are done by an internal design team and are presented in both electronic & printed format.

Initial stages of building, including the finishing and shop fitting, is covered by this department which enables us to do cost-efficient planning
when embarking on a new project.

All furniture, shop fitting and interior decor is handled by a team of professional joiners. The open-plan layout of a Barcelos kitchen is
purposefully designed to ensure that customers have visual contact with the preparation of the product and observe the cleanliness of the
preparation area.

The latest and most efficient catering equipment is used to facilitate the production line. Where possible, equipment is supplied with castors to
facilitate easier cleaning and enhance mobility. As important as the product is, so are the aesthetics of the Barcelos look and feel. Colours and
matching material have been selected so as to match both the historic value of the Barcelos name and the ethnicity of the product. Our decor is
warm and welcoming, and we trust that our patrons will support us, not only for the experience, but for the delicious meals on our menu.

Central Processing Facilities
Our Central Processing Facilities make use of state of the art equipment to ensure that all products are produced according to the highest
international standards by qualified, trained staff and distributed to all outlets. These facilities also manufacture and bottle our famous sauces
and marinades.

Hygiene is of paramount importance and our staff is trained to maintain the standards required by the industry. The brand image is vitally
important to Barcelos and we take utmost care during the process of distribution and packaging, in order to provide only the best quality, pre-
portioned fresh produce to our outlets.

Our spices and marinades are carefully balanced in accordance with our famous recipes, to ensure the consistency of the taste that has made this
brand unique.
