RESUMEN
ABSTRACT
Alcoholic fermentation is a bioreactor that allows degrade sugars into alcohol and
carbon dioxide., Primarily responsible for this transformation are yeasts (Vázquez,
2007). For this practice, the practice was performed in order to evaluate the sugar
cane production as a substrate for fermentation ethanol. Five samples were
prepared sucrose solution as a carbon source with different concentrations of yeast
Saccharomyces cerevisiae, the pH was adjusted to a range of 3.4 to 3.6, was
followed for 8 days, which evaluated behavior ° Brix, pH, acidity, and cell number.
Fermentation was obtained with CO2 production could observe the reduction of
soluble solids and pH, in the same way an increase in acidity and yeast growth.
Fermentation is more favorable when there is greater amount of inoculum.
