New Food Product
Tomato Muffins
1 cup all purpose flour
1/4 cup bran
1 egg
1/2 tablespoons baking powder
1/2 teaspoon salt
1/2 teaspoon vanilla
1 raw whole tomato
1/4 cup balsamic vinegar
1/2 cup brown sugar
1/4 cup pitted dates
1/4 cup+ 2 tbsp cocoa powder
2 tbsp fat free milk

Directions

Combine the flour, salt, powder, and 1/4 cup cocoa powder into a bowl. Pulse the pitted dates in
a food processor until it is a smooth paste. Add bran and continue to plus. once combined add
the raw whole tomato, egg and 1/4 cup brown sugar blend till smooth. Once done put the date
mixture into a separate large bowl or stand mixer and combine the dry flour mixture until dough
is formed. Prepare a dozen mini muffin tray with cooking spray and portion out a tablespoon of
dough to each spot. Place in a 350 degree oven for 25 minutes. during this time in a small
saucepan combine the vinegar and let simmer on low heat to reduce to half on low heat this will
take about 10-15 minutes min. Add the remainder of brown sugar, milk and cocoa powder
continue to let simmer on low heat to reduce while string for another 10 minutes.
