Food industry is one of the major institutions over the globe which produces diverse

products for human consumption. In order to meet the demand of customers need and
consumer behavior the food industry has changed and improved over the years. The institution
is characterized by a wide complex structure which composed supply, consumption, and
transport of food over the world. One of the major problems that the industry experiencing until
the present time is food waste which are parts of the food, especially fruits and vegetable, not
used for the production process. Waste produced from the production of a product is
considered as food waste that has a great effect on food security, quality and safety, on
economic progress, and on the environmental situation of the country.

Example of a food product that produces this waste is the production of snack foods out
of fruits and vegetables. One of the most favorite foods is the snack foods which add a
significant part of our nutrient and calories needed by an individual. The demand for the
production of a healthy snack food is a main target of the industry wherein snack foods added
with fruit and vegetables are very limited in the market. Tarla Aruna developed and evaluated
extruded snacks by using the pulp of selected fruits and vegetables which are mango, pumpkin,
carrot, papaya, and tomato to produce a healthy snack food. Aruna used extrusion as the
processing technology of his product. This processing technology had a vital function in the food
industry and act as an effective tool to produce a product that will meet the demand of the
consumers. But the development of this product made peels of the fruits and vegetables as
wastes which are not used in the process.

Fruit and vegetable peels are one of the common wastes that can produce in the
manufacturing industry that can cause economic and environmental problems. Aside from the
economic problem that this situation can produce, environment is the one who will also be
affected. Society’s too much waste of food parts causes our resources to lack. The impact of
food waste in our environment is very huge and serious, the fact that people are wasting up to
40% of the food we develop and this contribute a extensive pollution in our nature because of
the food thrown in landfills and water bodies to pollute a huge part of the environment.

Waste like peels can contribute to air, land, and water pollution. This affects the air when
the food is being decomposed and thrown into landfill that cause to produce carbon dioxide but
is also the main provider of methane gas in the atmosphere. Land is also affected by this waste
and it is where our food ends up and will consume a big amount that will pollute the soil in the
area. And last is the water, like landfills this waste can be thrown in waters bodies like rivers that
can contaminate the water. This waste can also produce bad smells that can give a negative
impact to its environment especially the people living in the area.

Throughout the years the interest in study on waste cause by the food industry and how
to prevent it was continuously increasing. Food industry causes huge amount of waste mainly
because of fruits and vegetables. With this, the need of collection of this waste for creation of
new products is necessary which will help ease the environmental pollution and country’s
economy.

This paper aims to developed and investigate a processing plant that can minimize or
prevents the waste and pollutants produce in a food processing industry.
