Cape Spear Stew

Cubed 2 pounds cured naval beef or salt beef or corned beef


Cubed 2 pounds leg roast of pork bone or pork loin roast
Cubed 6 potatoes
Cubed 6 carrots
Sliced 6 small white turnips
Cubed 6 parsnips
Sliced 1 cabbage (1-2 lbs)
Soaked 1 pound yellow split peas, soaked in water overnight
Sauteed 2 Tbsp flour 2 Tbsp butter or margarine
Simmered beef or chicken stock--enough to cover beef and allow for
vegetables to be added
To Taste, Salt and pepper

Chutney

Chopped 2 lb 4 oz gala apples


Sliced 1 lb 2 oz onions
Pressed 2 garlic cloves
Sliced 2 inch pieces fresh root ginger
Stir in 3.5 oz raisin
Stir in 18 fl oz distilled malt vinegar
Fold in 9 oz light brown sugar
Sprinkle in 1½ tsp salt

Soda Bread

420 F 35 min

Mix 4 to 4 1/2 cups flour


Mix 1 Tbsp sugar
Sprinkle 1 teaspoon salt
Mix 1 teaspoon baking soda
Mix 4 Tbsp butter
Fold 1 cup currants or raisins
Whisk in 1 large egg, lightly beaten
pour and mix 1 3/4 cups buttermilk

Fava Bean Soup

40 min simmer
Heat and stir 2 tbsp olive oil low heat
1 onion, chopped
1 parsnip, finely chopped
2 carrots, peeled and cut
2 stalks celery chopped
1/2 rutabaga, diced
1 can plum tomatoes, crushed
Pour in 5 cups chicken broth
Stir in 1 cup soaked [overnight] fava beans
To taste Salt and pepper

Molasses Cookies

1 Cup Packed Brown Sugar


1 Cup Butter, Softened
1/4 Cup Dark Molasses
1 Large Egg
1 Teaspoon Vanilla Extract
2 1/2 Cups All Purpose Flour
2 Teaspoons Baking Soda
1 Teaspoon Ground Cinnamon
1 Teaspoon Ground Ginger
1/2 Teaspoon Salt
1/4 Cup Granulated Sugar

Shortbread Cookies

350, 10 min
Room temp, cream 2 cups butter, softened
Cream 1 cup white sugar
Add 2 teaspoons vanilla extract
Gently fold 4 cups all-purpose flour
