Cooking Gourmet at Home Ingredients:
1 lb. -eggplant (peeled and thinly sliced)
¼ cup -green bell peppers – small diced
¼ cup -green onions-chopped
¼ cup -celery – small diced
1 tsp -granulated garlic
1 cup -onion – small diced
1 cup -bread crumbs
1 ½ tsp -kosher salt
1 cup -small shrimp
½ lb. -crawfish tails (rinsed thoroughly)
4 -redfish filets (cut a pocket in the middle to place stuffing in)
Pinch -red pepper
Pinch -black pepper
1 tsp -granulated garlic


STUFFED REDFISH DANTES Place eggplant on a sheet pan and rub both sides generously with olive oil
and bake at 350 degrees until tender. Chop well with spatula to break up
the eggplant into a puree. In a small brazing pan over medium heat cook
