I. Objectives:
a. Content Standard:
The learner demonstrate understanding of concepts and principles in welcoming guests and
taking food and beverage orders.
Performance Standard:
The learner demonstrates knowledge and skills in food and beverage service in relation to the
service area with accuracy

III. Procedures:
A. Pre-Activity (Cold Call)
1. Review
All the students will be asked to raise their right hand and will not put it down unless the
teacher tells them to do so. A random student will be picked.

1. What is a table napkin?


2. Give me examples of types of table napkin folding.
3. Why do you think we need to open the cloth napkins of our guest?

B. Motivation:
1. Prepare your handkerchief or table napkin.
2. Fold any type of table napkin of your choice.
3. Identify how many steps did you make on folding your table napkin.
4. Now, unfold your table napkin and identify how many steps did it took you.
5. Share it in the class.

C. Lesson Proper:
a. Activity: (SERVE-IETTE)

1. Prepare your napkin or handkerchief.


2. Choose your favorite napkin folding style and start folding.
3. Place it on your arm chair.
4. If I am your guest, how will you open the napkin cloth. (demonstrate)
5. Next, face your seatmate and let your partner open your napkin cloth.
6. And do the same to your partner.
b. Analysis: (Critical thinking or higher-order thinking skills)
1. How did you find your activity?
2. What difficulties have you encountered during your activities?
3. Why do you think it is important that we learn how to open the table napkin to our guest
properly?

I. Key Points before opening the cloth to the guest

 When all the guests are seated, the Food and Beverage Service Attendant unfolds
the napkins and gently places them on each of the guests’ laps.
 Minimum handling of the napkins must be ensured.
 He/She must be very careful not to touch any body part of the guests while laying
the napkins.
 He/She should check the body language of the ladies; if they are uncomfortable,
he/she must refrain from laying the napkins on their laps.
 Instead, he/she can put them on the hand rest of the chair. Some guests may prefer
to unfold their napkins themselves.

II. Laying the Serviette script

“By the way ma’am/sir will you allow me to lay the serviette on your lap?”

IF YES: Say Excuse to the guest then pick the table napkin and lay it on the lap of the
guest at the right side.

IF NO: Let the guest open and lay the cloth napkin to his/her lap

III. How to open cloth napkin for the guests

1. If the cloth napkins are being used, standing on the right side of the guest place the right
feet forward. Bend forward slightly and pick -up cloth napkin with the right hand.

2. Again, stand up straight and take one step away from the table.

3. Open napkin completely with right hand thumb and forefinger holding one corner, grip
the opposite side of the cloth napkin with your left-hand thumb and forefinger. The
cloth napkin will naturally fold over forming triangular shape.

4. Once a triangular shape is formed from napkin place your right foot forward alongside
of guest’s chair and at same time bend body slightly.

5. Stand on guest’s right, place the napkin on your right hand onto the guest left hand side
and your left hand onto guest’s right-hand side

6. Move your upper torso to your left whilst moving right hand (still holding napkin to the
guest’s left side.

7. Once the napkin is above the guest’s lap, place it down gently on the guest’s lap, and
then release both hands from the napkin. Step back away from the table.

8. This procedure should be done for all guests, ladies first moving clockwise at all times,
then males and finally the host/ess.
d. Application: (Practical Application/Return Demonstration)

Instruction:
1. Group the class into 5. And let them form 4 chairs into a circle.
2. Identify who will be the 1 – overseer, 2 waiters, and 4 as guests
3. The 2 waiters will demonstrate the proper procedures of opening table napkin with 2
persons each simultaneously in clockwise direction.
4. Each group will be graded using a rubric.

IV. Evaluation: (Performance Test on opening of table napkin using Rubrics)

Description Score
1. The group has identified who will be the first person that they will
open the napkin cloth.
2. The group has asked the guest if they will allow the waiter to open
the napkin cloth for them.
3. The group performed in clockwise direction.
4. The group has opened the napkin cloth on the right side of the guest.
5. The group has opened napkin completely with right hand thumb and
forefinger holding one corner, forming a triangle and placing it gently
on the guest’s lap.
100% of the group has performed all the correct procedures in opening the 10
napkin cloth. (indicators 1-5)
75% of the group has performed all the correct procedures in opening the 9
napkin cloth. (only 4 indicators)
50% of the group has performed all the correct procedures in opening the 8
napkin cloth. (only 3 indicators)
25% of the group has performed all the correct procedures in opening the 7
napkin cloth. (only 2 indicators)

V. Agreement:

Practice at your own home how to pour water in the glass. Share in the class your insights regarding the
activity on the next day of the class.
