ARTICHOKE

80 Days from Transplant Artichokes are a tender perennial in Zone 7.


However, Green Globe artichokes can be started indoors and moved outside when
all danger of frost is past. Plant 4 to 5 artichoke seeds in a 4” or larger pot in
January. (Tip - Some refrigerate seeds for two weeks before planting to bring them
out of their natural dormant state.) seedlings, leaving the strongest one to
grow. Plants should be 8”to 10” tall when moved outside when soil temperature
reaches 60º. Space plants 4 to 5 feet apart, as the plants get quite large. Artichokes prefer well
drained, loamy soil and plenty of water. from periodic feedings and a 3” to 4” layer
of mulch. Cut the buds before they bloom or use the purple blooms in dried arrangements.
Artichokes can be a crop to raise, but well worth the trouble.

ASPARAGUS
Asparagus is a cool weather (Zones 4-9), perennial vegetable that takes 2-3
years to produce a harvest. However, patience is rewarded by a crop that may
last 20 years. Asparagus seed should be sown in light, sandy soil, early in the
spring. Plant 2 to 4 inches apart, 1/2 inch deep in rows 15 to 24 inches apart. As
asparagus germinates slowly, mixing in a few radish seeds to mark the row, aids
in weeding and cultivating. Roots may be transplanted either the following spring
or in garden for two years.
Dig trenches 6” wide and 6” to 12” inches deep and 4” apart. Create mounds 15” to 18” apart.
Spread crowns (roots) over mounds. Cover with two inches of soil, pack tightly and water thoroughly.
Gradually the trench as the plants grow. Composted manure may be used in the bottom of the
trench.

BUSH BEANS
Well tended beans are a highly productive crop. Kept watered and picked regularly, one of our
generous packets of green bean seeds will provide 20 plus pounds of beans over a season. Plant 1” to
2” deep, 1” to 3” apart, in rows 20” apart, when danger of frost is over. Control weeds with mulching
or cultivation until blossoming season. Beans need the most water when blooming and setting fruit.
If allowed to dry out, beans will be tough and stringy. Pick young, tender beans frequently, about
once a week, to insure the best quality.

Performed well in our test garden. Firm but not stringy until
overripe. Good yield with some drought tolerance, but sweeter when watered
regularly. Good canned or frozen.

BRUSSELS SPROUTS
Growing Brussels Sprouts is all about timing. It is a long season crop

Sprout seeds directly in the garden in a warmer climate. Start transplants


inside in a cooler climate. Get them in the ground when you set out
your warm season crops. Plant seeds 1/2” inch deep and thin to 2’ apart
when the seedlings are 5” to 6”tall. Rows should be 3’ to 4’ apart. Mulch
to retain even soil moisture and keep weeds down. As the little sprouts
mature, harvest from the bottom of the stalk, removing the leaves as you
go. Moderate feeders, like Brussels Sprouts, enjoy a dose of manure tea or other fertilizers about

CABBAGE
Cabbage is one of the easiest crops to grow and does well in all parts of the U.S. A versatile
vegetable with a long shelf life, cabbage can be used in soups, stews, salads, side dishes and more.
It keeps well in a root cellar and is easy to can as sauerkraut. Stand the plants upright in a cool
cellar with roots in the sand for the winter.
Best if matured the last frost date. Count back the days of maturity to time cabbage crops.
Start seedlings inside 8 to 10 weeks before your last frost date. In warmer climates, plant cabbage
seed directly in the garden 12 to 14 weeks before frost date. Red cabbage takes longer and Chinese
cabbage is just 75 days. Plant 2’ apart for large heads or 1’ apart for smaller heads. Harvest
every other one and let some grow bigger. Keep mulched to maintain even moisture, stable soil
temperature and keep the weeds down. Cabbage is a heavy feeder so fertilize monthly.

Wonderful sautéed or sliced thin in salads. Heads 4” thick, 20” tall,


tapering to a point. Chinese cabbage is tender, crisp and sweet. Usually
planted in mid to late summer.

CELERY
In a garden, celery is considered the ultimate challenge. Celery does not
like extreme heat or cold and requires a long season. Seedlings are most
started inside 8 to 10 weeks before the last frost date. Starting tiny celery
seeds takes care. Mix them with a small amount of sand and sprinkle on top
of a good potting soil. Once large enough (6” tall), and the soil temperature

summer in long season areas. Fall plantings fare better with pests in warm

ONIONS
Most people think growing onions from sets is the way to go, but the opposite is
preferable. When starting with sets, more green than bulb is produced. Onion seeds
perform better, especially if you choose the right variety for your area. ˜ere are
three types of bulb onions: short day, intermediate day and long day. ˜is
refers to the length of daylight in your latitude. Northern areas are long day,
southern areas like Texas are short day and Colorado would be intermediate.
Short day onions require a long growing season. We grow nice short day onions
here in Rocky Ford, Colorado because of the warm climate and extended growing season
(Hardiness zone 5b).
Onion seeds can be direct seeded in warm climates or started indoors in cool climates. Start onion
seedlings inside 8 to 10 weeks before transplanting outside in cool climates (Zones 6 or lower). Sow
seeds in pre-moistened potting soil 1/8” deep. Press down lightly and keep evenly moist. Onion
seeds take a while, so be patient. Trim seedlings to 3” as they grow to keep them from getting top
heavy and strengthen stems. Transplant 3 to 4 weeks before your last spring frost date. Space 3” to

to 4” apart when small. Green onion seeds should be planted or thinned to 1” apart.

PUMPKINS

lots of room, good drainage and very rich soil. A site recently amended with
composted manure is ideal as pumpkins are heavy feeders. Pumpkins do best

RADISHES
Their benefits in the garden are numerous. Cucumber beetles are repelled by
radishes. Radishes are an excellent trap crop, diverting the attention of flea
beetles from your other crops. People will use them to mark a row where slow
germinators are grown. If the soil is silty, a crust will form when drying after
a heavy rain. Radishes can be planted along with other seeds to break that
crust. Icicle radishes are planted as a fall cover crop to suppress weeds, break
up the soil and add organic material to the soil (after the winter freeze.)
Sow radish seeds 1/2" deep 1" apart 4 to 6 weeks before the last spring frost.
Thin to 2" apart when seedlings sprout. They do not grow well when crowded.
Plant in a sunny location as radishes need full sun to produce a bulb. Keep evenly moist. Plant

Rhubarb is a cool weather perennial, preferring zone 6 or lower. It can be

SPINACH
