ater gardens are intended to be en joyed 24/7 and 365 except for leap years. Seriously, a change of life occurs when you own a water garden. The sense of calm and tranquility felt during the warm months can still be enjoyed during the winter if some simple steps are followed to insure smooth operation and health of your pond. Windblown Debris First of all, there is a lot of organic material blowing around before and into the first of winter. You can cover your pond with a net that will keep the majority of leaves, twigs, and debris out of the water. Or you can work a little bit harder and keep air blown debris skimmed out of the pond. If you have a skimmer as part of your pond, it still requires more frequent emptying of the skimmer net. This simple first step will determine water quality and other steps that will need to be followed. Don’t Feed the Fish!! Secondly, stop feeding your fish once the water temperature drops to 52 degrees. The metabolism of fish slows to an almost stop as temperatures fall. The main reason for this is that you can cause great harm or death to the fish by feeding at this stage. The food consumed will sit inside the fish which is fed and start to rot the fish from the inside out. So please don’t feed your fish during cold weather. They will be fine for the next 90 to 100 days. Add Salt? Yes! Third, it is a really good idea to add noniodized salt at 3 pounds per 1000 gallons of water. This will enhance the slime coat of the fish which actually protects the fish from parasites and different types of sickness. The salt level in your water garden will not decrease once salt is added. Even during evaporation the salt stays the same. Only a change of water will lower salt levels. However, 3 pounds per 1000 gallons will not harm plants or the ecological balance of the pond. Bacteria? Yes! The fourth and a very important item to remember is that bacteria growth slows to a

halt in production during winter months. However it will still produce in the early mild periods of winter. You can apply cool weather bacteria to the pond to promote its growth. Bacteria are needed to keep the algae bloom to a minimum. Another option during the early and late winter periods is to use a UV device. This kills algae as it passes by a sealed ultraviolet lamp installed on the discharge side of the pond pump. The cost is moderate compared to the cost of algaecide over an extended time period. Water Color If the color of your water is too tea-like for your taste, a particle water charge will clarify the dark tea tone of organically saturated pond water. However, you must use caution. The chlorine in tap water can be counterproductive to your pond ecosystem; it can burn the gills of your fish and otherwise cause stress to them. You will need to also add a dechlorinator to your pond when adding potable water. Underwater Lights There is a step in the winter that I strongly suggest to the serious water garden hobbyist: add under water lights to your pond. The short winter days make for longer nighttime hours. We tend to leave and come back to our homes in the dark. By adding lights to your pond, you will be able to enjoy your pond more 24/ 7. While your pond will need attention, it should not require more work than pleasure. I once had a Ph.D. tell me that by leaving your pond alone you accomplish more than by getting involved and trying to control the pond ecosystem. So just take care of these few simple steps, sit back, and enjoy your water garden year round. Happy winter gardening!

come to grips with the fact that we are indeed what we eat and how we eat it, and what we eat eats (both plants & animals) and how they eat and how they’re raised? Many and probably most of our modern ailments and diseases are direct results of our industrial diet and our industrial lifestyle (toxins). Better living through chemistry has been a two-edged sword. We ALL enjoy luxuries, conveniences, time savers, and backbreaking work savers that are marvelous blessings. But the bigger, bigger, more, more model of our modern capitalist society has got to have some balance. The family farm has been dying for a long time. Our agricultural policies, our seduction by cheap, fast food, our misguided overproduction, our disconnect from real food and the value it has in our lives, and what it costs to produce it ~ so many factors have combined to push out small farmers and drive their children elsewhere to earn a living. Good farmers are like good soldiers ~ they fight the good fight because “it’s who

we are, it’s what we do.” It’s what they believe in. We are blessed to have a number of dedicated, family-owned and operated, organic, sustainable-agriculture farms and ranches in our North Texas region. We all need to realize the long-term benefits to our families of eating the high-quality, nourishing food they produce. We need to support these “warriors,” to encourage their children to embrace and preserve their legacy, and to encourage more to join their ranks. We need more small, American family farms, not fewer. We need to encourage genuine free trade, between local farmers and their communities. Join co-ops. Buy their products directly or through the smaller health-food stores. Stretch your budget. Learn to eat less higher quality food rather than more and more empty processed calories. Read, get informed, get active, educated your kids about real food, and talk to farmers when you can. You’ll be glad you did!

Detoxifying Footbaths

An easy, stress-free way to clear the junk out of your body, easy aches & pains, think clearer, and generally promote better health


suppose you all may have seen or at least heard about the segment Channel 8 News did on detoxifying footbaths. It seems to have stirred up quite a bit of interest and I have been getting a lot of questions on the subject since the news segment aired. I have been using one in my practice for two years, so let me attempt to explain a bit about this effective detoxifier. The Machine There are several different makers of the machines used for the footbaths. At my office, we use the EB-305, made by Erchonia Medical. They all do basically the same thing, though I’m sure the manufacturers would all insist that theirs is the best. The Process Short anatomy lesson so the rest of this will make sense: Your skin is an excretory organ. It is designed to pull toxins from your body and eliminate them. Your feet have a rich supply of capillaries (very small blood

vessels), which run close beneath the surface of the skin. The free radicals you hear and read so much about these days are simply chemical strands that have a positive or negative charge. They are the leftovers from the chemicals in the food we eat, things we drink, and the air we breathe. The EB-305 (or other similar unit) creates a microcurrent charge in a warm saltwater bath that will attract the free radicals from the capillary beds through the skin and into the water. Half way through the treatment, the polarity of the microcurrent changes and it will pull the oppositely charged free radicals from your body for the remainder of the treatment. You might be surprised to see what a 20- to 25-minute treatment can pull from your body. The Benefits Now why would you want to do this? It eliminates toxins from your system and will generally reduce any aches you have and help you think more clearly. The footbaths

are an easy, stress-free way to clear the junk out of your body so that it can function as it should. How Often? The number of treatments a person has to do for results? Most people notice at least a reduction in the ache of their feet after one treatment. We offer package deals of 3 and 10 visits. Usually for best results, I suggest a series of 10 treatments over 3 to 4 weeks. It all depends on the person’s condition and what they want to accomplish. Should you want to take things a step further, we can provide information on colon cleanses, nutrition, and even point you in the direction of products that can reduce the chemicals you come in contact with. But no real testing was done to prove or disprove the theory. Opponents to this conclusion say that in naturally soft water, copper and iron are

WHO has determined that there should be at least 30 ppm calcium and 10 ppm magnesium in the water in order to be healthful drinking water. If things were done according to WHO, the lowest TDS purified water could have would be 50 ppm. But any water over about 25 ppm is cloudy when frozen, giving the indication of contaminants. Bureaucracies run best on confusion. How about passing a law that states that if a person buys water that is below 10 ppm, they are required to be on double Daylight Savings Time? That would

“A Doctor’s Confession to the Town of Flower Mound…”
And why, despite all, I still do what I do…
Dear friend,
Confessions are tough. Real tough. But, sometimes a confession can set the record straight, and I want to give credit where credit is due. Before I talk about my confession, though, let me say a few other things first. Let me start by explaining the photo in this letter. I’m the one in the middle and that’s my husband beside me. Let me tell you my story. Years ago something happened to me that changed my life forever. “I remember like it was yesterday, although I was just in high school at the time. It was the day I got hired to work for this incredible man. The more we talk and the more I learn about him, the more I get interested in what he tells me. He tells me how excited he is to go to work everyday and how passionate he is about his job. He loves seeing kids, families and all kinds of people come to see him. And, that’s not all… You see, this incredible man is a doctor, but not just any doctor. He tells me that his type of doctor has a very different way of looking at health. They understand that the body knows how to heal itself, and because of that these doctors do not use drugs or surgery at all. But, there’s more… He tells me stories about kids that were really sick, and got help nowhere else, getting well. He tells me stories of people with terrible migraines that get well. He talks about people crawling in and walking out. I can tell he makes a positive impact on their lives and that they all love him for the miracles they see happening. By the way, this amazing doctor is a Chiropractor. After hearing my new boss’ story I am fascinated and impressed. It was soon after that I begin to witness all of these wonderful testimonies of his patients. I am so touched by what chiropractic has done for these patients that I eventually decide to go to chiropractic school myself. Now, I, too, am a chiropractor. And, you know what? I’ve never looked back; it was the best thing that I’ve ever done. I have the best job in the world. And, that’s how it happened!” Now for Michael and Alaina, they are twins and were born at 26 1/2 weeks and spent their first 3 1/2 years of life in and out of the hospital. They were taking medications three times a day everyday! Their parents were very tired of always being in the pediatricians office taking medications and thought that there had to be a better way. That’s when they decided to try chiropractic. Alaina suffered from attention deficit tendencies, asthma and was taking medications regularly. After getting adjusted not only has she been able to focus better and doesn’t struggle like she used to, but her asthma is no longer an issue and is off of all her medications! Michael also struggled with asthma and motor development issues. He was born with emphysema, a collapsed lung and suffered from a misaligned rib cage. After getting regular chiropractic adjustments, he is It’s strange how life is, because now children come to see me for asthma and childhood illnesses. Also they come to me with their headaches, migraines, chronic pain, neck pain, shoulder/arm pain, whiplash from car accidents, backaches, ear infections, asthma, allergies, numbness in limbs, athletic injuries, just to name a few. Several times a day patients thank me for helping them with their health problems. But I can’t really take the credit. My confession is that I’ve never healed anyone of anything. What I do is perform a specific spinal adjustment to remove nerve pressure, and the body responds by healing itself. We get tremendous results. It’s as simple as that! Being a chiropractor can be tough, because there’s a host of so-called experts out there. They tell people a lot of things that are just plain ridiculous about my profession. But the studies speak for themselves, like the Virginia study that showed that over 90% of patients who saw a chiropractor were satisfied with their results. That’s just incredible! Thermography is for any woman who would rather not endure the discomfort and/ or radiation of a mammogram, if not medically necessary. Thermography is especially appropriate for younger women between 20 & 50 whose denser breast tissue or implant makes it more difficult for mammography to pick up suspicious lesions. Corn Walking Mexico’s Mayan descendants have referred to themselves as “corn walking,” due to their dependance on the cultivated version of the giant tropical grass Zea mays. Did you know that biologists can identify the stable isotopes of carbon in human tissue and connect them with the original plant that brought that isotope into the food chain? As a C-4 plant, corn is especially easy to identify, even after the carbon atoms it recruits have “been transformed into things like Gatorade and Ring Dings and hamburgers, not to mention the human bodies nourished on those things.” So explains Michael Pollan in his very educational and delightfully written Omnivore’s Dilemma ~ A Natural History of Four Meals. A Berkeley biologist told Pollan that today’s American looks “like corn chips with legs,” while today’s Mexican still eats grass-fed animals, gets much protein from legumes, and drinks beverages sweetened with cane sugar. We Americans have become “processed corn walking.” Corn feeds our beef, our dairy cows, our chickens (and our eggs), our goats, our farmed fish, and even our cars (ethanol). Highfructose corn sweetener (HFCS) is in almost everything, including sodas, fast-food shakes, meat patties, ketchup, breads, dressings, sauces, and so on. Other corn ingredients include oils, binders, emulsifiers, fillers. Corn skin is processed into various vitamins and nutritional supplements. Even the reformulated “white meat” McNugget requires 38 ingredients, at least 13 of which can be derived from corn. Pollan’s book is an easy, entertaining, though also disturbing, read. It’s a book to be read with the whole family, to (as we used to sing) “teach your children well” about the ocean of corn that floats our modern world, the broken grass connection that sustainable agriculture is trying to fix, our post-WWII chemical world, sun-fed versus petroleum-fed food, pastoral vs. industrial organics, and even the virtues of the hunted and gathered meal. Pollan explains how corn “won over the wheat people” as Americans traveled westward over the mountains. Corn’s endless versatility and ability to be dried or distilled into easily transported forms allowed it to become both food and commodity. Along came hybrid corn, and now genetically modified corn, that renders farmers dependant upon a corporation for new seeds every spring ~ and synthetic nitrogen and farm policies that seduced farmers into overproduction that drove prices down, drove small farmers off the land, and drove many of the new, big-industrial farmers into crushing debt and a tread-mill, “grow-ever-more-to-make-upfor-low-prices” existence. Now we have the problems of a plague of cheap corn (and “second sister” soybeans), and consumers with a “fixed stomach.” Wall Street says any business must always grow, bigger and bigger. (“We must answer to stockholders,” and that includes public companies like Whole Foods as well as Wal-Mart.) So, the food industry has to be ever creative to solve the problems of excess biomass and inelastic demand ~ we can each eat only so much. Sustainable vs. Industrial The industrial model versus the sustainable (pastoral) model is summarized as petroleum driven vs. sun driven, monocultures vs. biodiversity, specialized vs. diversified, mechanical vs. biological, expensive inputs vs. few inputs, bare ground vs. green cover crops, crowded pens vs. intensively managed grazing, highly stressed animals vs. minimal stress, synthetic wormers and antibiotics vs. very little need for either, feed the plant vs. feed the soil, global markets vs. local markets, and so on. The industrial diet (and thus the restaurant and the store) demands consistency in taste, texture, look, and supply, while real food is subject to the inconsistencies and the seasons of the natural world. The industrial diet wants food that is cheap, convenient, and storable (it has a shelf life). Real food has real value and comes at a higher cost, and lower volume. It’s fresh and fragile and not intended to travel long distances. Some of it can be stored for a time. This is why it is difficult and often impossible for a small local farmer to sell through a major store, organic or otherwise, because of the demand for large quantities, often for many stores, consistently through the year. n this article, I would like to talk about acidophilus ~ probiotic, prolife, friendly flora ~ and the wonderful benefits from taking this supplement. We all need to realize acidophilus’s importance in helping to repopulate the intestinal tract with healthy flora. These bacteria are friendly microorganisms which naturally inhabit the intestinal tract, aiding digestion and absorption of nutrients, as well as enhancing our immune function. If we drink caffeine, coffee, carbonated drinks, or take medications, these kill our friendly flora. Acidophilus bacteria flourish in the small intestines, where they assist in the production of enzymes, and stimulate enzyme activity, enhancing greater assimilation of nutrients, and increasing our energy. Lactase and B Vitamins Acidophilus produces acidophilin (a natural antibiotic substance), lactase (the enzyme responsible for digesting lactose), and certain Bcomplex vitamins (B1, B2, B12), which increase our energy. Apple Raisin Cookies 2 C sunflower seeds, soaked 4 hours and rinsed. 2 fuji apples, grated 2 large bananas 1/2 C dates 1 C raisins 1 t cinnamon 1 T flax oil 1 C walnuts, soaked 2 hours, chopped. Process sunflower seeds and bananas through a champion juicer with no plate (grate). Mix all ingredients together in a

large bowl. Spoon dough on a dehydrator tray with a teflex sheet and form into small round cookie. Place cookies close together on the sheets. Dehydrate at 105 degrees for 4 hours, turn cookies over and remove teflex sheet. Continue dehydrating until desired moisture is obtained, approximately 3-5 hours. Apple Cabbage Holiday Slaw (By John Svoboda) Everyone loves this dish, thanks John ½ Head of Cabbage shredded 1 C Raisins (I like golden) 4 Apples Shredded 2 Apples juiced (can be optional) ½ C fresh lemon juice mixed with ¼ C Honey (pour over apples immediately after cutting/shredding) ½ - 1 T Pumpkin Pie spice to taste (Allspice, Clove, Cinnamon and Nutmeg) ½ C Shredded dried coconut Cranberry Sauce by RoseLee Calabro 2 C fresh cranberries 1 orange 1 apple 1 C dates Water for consistency Process cranberries, orange, apple and dates in a blender and serve. Mushroom Gravy By RoseLee Calabro 1/2 C almonds, soaked 12-48 hours and blanched 1/2 C water 2 C shitake mushrooms water for consistency 1/2 C shitake, finely chopped 1/4 t garlic granules or 1 clove garlic 2 tsp. Bragg Liquid Aminos Blend almonds and water until smooth, set aside. Blend mushrooms add water for consistency. Add almond milk,

chopped shitake, seasonings and mix well. Mashed “Cauliflower” 1 Head cauliflower 1/4 C Flax Oil or Olive Oil Mrs. Dash All Purpose Seasoning to taste 1avocado 1 Tbs Nutritional Yeast Process cauliflower in a food processor with “S” blade, chop until “grainy” add oil, spices, avocado & Nutritional Yeast, blend until smooth, add distilled water if necessary. Serve with Mushroom Gravy. Note: This dish may have a very powerful smell which is unattractive to cooked food eaters. Turkey Dressing by Rose Lee Calabro 1 C almonds, soaked 12-48 hours and blanched 1 C pumpkin seeds, soaked 6-8 hours 1 C sesame seeds, soaked 6 hours 1 C filberts, soaked 6 hours 1 C white onions, finely chopped 1 T poultry seasoning 2 tsp. powdered kelp 1 C parsley, finely chopped 3 T flax seeds, soaked 2-4 hours 3 T Bragg Liquid Aminos 2 T lemon juice In food processor with “S” blade, process nuts and onions or process nuts in a champion juicer with the solid plate. Add onions, spices, lemon juice and mix well. Form dough using a turkey cookie cutter, place on dehydrator tray covered with teflex sheet. Dehydrate at 105 degrees for 4 hours until a crust has form. You can either eat them now or turn over, andremove teflex sheet, continue drying for 8 hours or until moisture desired is obtained. Serve warm plain or your favorite sauce.

By definition, osteoporosis is “a systemic skeletal disease characterized by low bone mass and mircoarchitectural deterioration of bone tissue, with a consequent increase in bone tissue fragility and susceptibility to fractures,” according to the Consensus Development Statement in Osteoporosis Int 1997:7:1-5. Osteoporosis is a silent disease, often asymptomatic until fractures occur and early diagnosis and treatment are essential. But the medical model uses diagnostic testing that, for the most part, only picks up a problem AFTER the bone loss is significant. Failure of Medical Model For years now the osteoporosis information given to the public makes it seem that developing osteoporosis is inevitable for the 12 million Americans afflicted. Emphasis has been on the genetic factors leading to increased risk which are being female, white or Asian race, thin or low peak bone mass and a family history of fractures with a medical risk of menopause and glucocorticoid, thyroid and growth hormone use along with lifestyle factors of

excessive alcohol use, smoking, lack of exercise and low calcium and vitamin D intake. This information has failed to mention there are at least 17 nutrients associated with bone health and that the recommended high doses of calcium imbalances magnesium which is now the most common mineral deficiency in the US and the cause of a host of other health problems. And, lack of regular exercise has been mentioned but also not emphasized. Also, while there has been some talk that diet in adolescence and the teen years is important for osteoporosis prevention, emphasis has not been place on the FACTS. The importance of other nutrients, not just calcium and a good, non-junk-food diet in childhood and teen years has not been adequately explained or emphasized. Bone Density in Adolescence! Most parents are not aware that 50% of skeletal (bone) mass is accrued during adolescence and that in girls, 95% of total bone mineral density is accumulate by age 17.4 with only an additional 4% added by

age 26.2. A childhood diet inadequate in all of the bone nutrients including protein, magnesium, trace minerals and vitamins B, C and D, leave young women lacking in bone density by age 17. Bone density naturally begins to decline after age 30, so that by menopause women are already suffering from significant bone loss and the accelerated bone loss in the immediate menopause years is the “straw that breaks the camel’s back” ~ literally. It is also documented that children inadequate in calcium may also be low in Vitamin A, folate, Vitamins B2 & B6, magnesium and potassium, leading not only to bone density problems but many other health issues as well. ere are just some of the things water does for your body: maintains body temperature, aids in digestion, metabolizes fat, lubricates organs, protects organs and tissues, transports nutrients and oxygen throughout the body, carries waste away from cells, flushes out toxins, and lubricates joints and eyes. Your body needs water for the following reasons: Skin ~ Skin becomes dry and cracked without enough water. Your skin is the ain conduit for releasing water from your body. Blood ~ Blood is 92% water. Your blood gets thicker when you are lacking water. This makes it difficult for your heart to pump. The water we lose through sweating comes from blood plasma. Plasma is the vehicle for red blood cells which contain the oxygen that muscles need in order to perform work. As you become dehydrated, your total blood

junk food diets increase the risk for osteoporosis as well as the factors listed above along with lack of exercise. Simple Early Test In addition to making better diet choices and supplementing bone nutrients, it is important to test and see if bone loss is occurring, before it becomes a health issue. It is unfortunate most doctors do not recommend a simple, inexpensive urine or saliva test that can determine bone loss long before x-ray shows severe bone loss or fractures occur. This test, which measures the bone marker deoxypyridinoline, can determine who is really at risk for osteoporosis by showing if bone is being broken down faster than it is being made. It makes good sense to do this $48.00 test once every year or two, starting in the teen years, so that any problem can be picked up and proper diet, nutrition and lifestyle factors can be addressed and osteoporosis prevented. heat. Pour this “glaze” into an ungreased cake pan. To make the cake, combine the wet ingredients in a large bowl. Mix the dry ingredients in a separate bowl and add to the wet ingredients. Pour the batter into the cake pan, directly over the glaze. Bake at 350 for about 45 minutes or until a tester inserted in the center of the cake comes out clean. Slice and serve hot or warm, right from the pan. **This mixture works as an excellent substitute for eggs. Not only does it bind ingredients together, but muffins rise beautifully when the flaxseed mixture is used. 1 cup of this mixture = 4 eggs ¼ cup flaxseed • 1 cup water Grind flaxseed in blender on high speed for about 1 minutes or until the mixture resembles a thick eggy consistency. he organic produce co-op has made a significant change for my family. My husband and I have both lost a size (and my husband really wasn’t trying too). Also, both of us have an increase in energy. My husband said he didn’t even realize he didn’t have any energy until he had energy. Amazing! He has always been athletic and is working out even more. I finally have the energy to start working out. So after doing my research, and trying out different things, I am finally ready to start trying to put it all together ~ at the same time. Whole Grains and Portion Size As for the whole grains, we had stopped for a bit with our recent move, and were eating out a lot and buying convenience foods from the grocery store. Amazing! Do you know there are places we can’t eat at now? There are some restaurants we use to frequent, but the food gives us headaches now. And I, trying to switch it up, bought some white bread from the grocery store to make some sandwiches ~ and guess what we noticed? My husband automatically ate two sandwiches when made with white bread. When I make whole grain bread, he can barely get through one sandwich. My husband did not even notice. I hadn’t really noticed either, but there it was. I said, “Anthony, did you notice you ate two sandwiches? I realized that when I started making whole wheat bread, you could barely eat one, but you just ate two sandwiches. I realized when I used to prepare you sandwiches on white bread before, I automatically made you two sandwiches for lunch.” So, Monica, what I realized is that even though I always thought I ate pretty well, I probably had a problem with portion size and didn’t realize it! Just like my husband could eat two sandwiches and not even realize it! WOW! The Cracker Test Then there was another reminder. When I make soup, I may put it on top of brown rice and that’s it. Well, you know, when I did not use brown rice and we had crackers in the pantry (you know the ones that have four wrapped packages inside the box you get from the grocery store?), well, Anthony would eat one whole pack of crackers all by himself! It’s no wonder there is so much obesity and disease in this country. Many of the conventional foods we eat are providing calories, but little if any nutritional value when compared to whole foods. And it’s legal! And what I realized is that even though the effect on us may be different, it does affect us. For me, you can “see” the effect because I guess my body just said enough is enough and it finally showed up in my weight gain. With others, you may not see the effect, but they ”know” it is effecting them because of the medications or doctor’s appointments they endure. Thank you so much for allowing God to use you to educate us,

and serve us the way you do. You very well may have a direct effect on growing the kingdom, as better health will allow us to serve Him better!

Jim and I wanted to let you all know how much we appreciate the efforts that are going on all over North Central Texas to make health and healthful living the norm rather than the exception. Not so long ago, we felt alone in our endeavors to lead a healthier lifestyle. I remember when we knew only one other family that was bent on becoming characterized by better health choices. Now, we are blessed to know so many. We are in a constant growth mode and are learning new things from the cumulative knowledge of the Health Source Co-op Members. You are such an encouragement to us and a great encouragement to our children. Right now, as I write this article, I have a kitchen full of children (2 of my own and 3 of a dear friend’s). The children are making Gingerbread Spice Cake. Gingerbread was a favorite of mine while growing up. The spices involved in the recipe make a house smell like home. If you haven’t branched out and tried natural, unrefined sweeteners, may I encourage you to try some today. Make it a goal to inch refined products out of your kitchen, or at least to minimize their use. The children used freshly milled flour, healthy pastured eggs, unrefined sweeteners, and lots of giggles and excitement to pull together this yummy recipe. I hope you enjoy it, too! Gingerbread Spice Cake Maple Glaze (use a small pan on the stove for this part) 2 tablespoons unsalted butter • 1/3 cup maple syrup Wet Ingredients (mix in a medium bowl) ¾ cup almond milk, rice milk or milk ½ cup flaxseed mixture OR 2 eggs **see below for Flaxseed Mixture that can be used as an egg substitute ½ cup sucanat (unrefined sugar) • ½ cup molasses 6 tablespoons unsalted melted butter • 1 ½ teaspoons vanilla Dry Ingredients (mix in medium bowl) 2 cups whole wheat pastry or spelt flour or golden wheat (freshly milled flour is always best) 1 tsp baking soda • 1 tsp cinnamon • 1 tsp ginger • ½ tsp salt ¼ teaspoon cardamom (can be skipped) Makes 8 large servings To make the glaze, melt the butter over medium heat in a small pan. Stir in the maple syrup and cook over high heat just until it bubbles; remove from

It uses air pressure to push your tongue forward and open your throat. This allows air to pass through your throat. It reduces snoring and prevents apnea disturbances. Of the available treatment options, PAP therapy is the safest and most effective. People on PAP therapy have reduced health risks and more energy to do the things they want to do. You should put your CPAP device on whenever you sleep, even for naps. A CPAP device does not cure sleep apnea. But, when you use the device correctly, your sleep problems should get much better.

cent years adopted the grocery industry’s standard regional distribution system, which makes supporting small farms impractical. Tremendous warehouses demand tremendous farms. Earthbound Farm is a massive corporate organic grower, Grimmway owns CalOrganic, Cascadian Farm and Muir Glen are owned by General Mills, 85% of Stonyfield Farm is owned by French food giant Groupe Danone, Horizon (owned by Dean Foods) and Aurora own industrial-scale confinement dairies (for details, see cornucopia.org), and so on. Organics is big business, and what you get is often not what the “feel-good” marketing literary genre promises. “Supermarket Pastoral is a most seductive literary form,” writes Pollan. Eating “in season” and “in region” has become a foreign concept to us today, and most of us would not like to give up the freedom and pleasure of sampling the country and the world for the many locally unavailable specialties (like coffees, teas, exotic fruits, etc., etc.). The problem is in the replacement of what should be grown in our region, or in our own country, with cheap agricultural imports of questionable organic standards (from China for example). Why are we not doing everything possible to support many, many small American farms? [A “small” dairy can be 200 cows.] As mentioned above, our economy and business philosophy is geared for large scale and the corporate buy-out, and the economies of organernment program called the National Animal Identification System [NAIS], a wise and justified rebellion in our way of thinking here at HAYC. But there is also that problem of supply, which was addressed in a cover story by Diane Brady on October 16, 2006, in Business Week, titled “The Organic Myth.” She mentions the industrial-scale feedlots and the scarcity of organic ingredients which “means looking as far afield as China, Sierra Leone, and Brazil ~ places where standards may be hard to enforce, [and] workers’ wages and living conditions are a worry....” Stonyfield gets strawberries from China, apple puree from Turkey, blueberries from Canada, and bananas from Equador, she writes, and is looking at importing organic milk powder from New Zealand. “Shipping milk powder 9,000 miles across the planet is the price you pay to conquer the supermarket dairy aisle,” she writes. She quotes the Stonyfield CEO lamenting that it “’would be great to get all of our food within a 10-mile radius of our house, but once you’re in organic, you have to source globally.’” (continued on pg. 45)

Many Popular Prescriptions Can Cause Serious Nutrient Depletions!

program to make all patients aware of these nutrient depletions, but most of the programs have proven unworkable or, at best, incomplete. Many of our currently most popular drugs (as many as half) have well-known nutrient depletions. Some of the commonly prescribed categories with known depletions are oral contraceptives, anticonvulsants, diabetic, cholesterol reducers, stomach-acid reducers, antidepressants, blood pressure, and antibiotics. The following are some brief, but specific, examples. Oral contraceptives have been reported since the mid-1970s to deplete folic acid, vitamins B6, B12, B2, and magnesium. The folic acid depletion may be particularly important when these women later attempt to become pregnant, due to the known link between folic acid deficiency and neural tube defects. The effects of these depletions may have serious implications for the patient’s overall health. For decades now there have been studies reporting nutrient depletions caused by drugs. itamin C is becoming more and more important in health especially in Complementary and Alternative Medicine circles. Many people agree that Vitamin C is a powerful antioxidant but Vitamin C is more just a powerful antioxidant. It is turning out to be an important weapon in the fight against heart disease and cancer. A lot has been written about Vitamin C even in conventional medical literature especially cardiology literature, yet when it comes to discussing the usefulness of this vitamin, such discussions are confined to complementary and alternative medicine. Heart Disease With respect to heart disease, vitamin C has been shown to be effective in reducing blood pressure in hypertensive patients and preventing strokes. The most feared form of heart disease is coronary artery disease, where plaque builds up in the opening of these arteries to limit blood supply to the heart. The plaque could rupture and subsequently blocks blood flow to a portion of the heart, thereby causing a heart attack. Vitamin C has been shown to prevent the process of plaque formation. There is also new information now that this vitamin could treat plaques that have already formed, thereby preventing heart attacks.

Cancer With respect to cancer, there are many publications over the last 60 years showing the benefit of this vitamin in the prevention and treatment of cancers of many types. There is new evidence showing Staff member Meagan Wolff goes over a chart with Dr. Idemudia that vitamin C may be a powerful chemotherapeutic agent without the undesirable side effects of traditional chemotherapy. How Much and When? How much vitamin C should one take and what route should it be taken? This depends on the problem that one is facing. For general health maintenance, oral vitamin C in a good multivitamin preparation or by itself is usually sufficient. However, when there is a threat to one’s health be it a minor or a major threat, then much

higher doses of this vitamin are needed. There is still some controversy as to the benefit of vitamin C in health and disease. However, when the literature on vitamin C is reviewed, there is overwhelming evidence supporting its usefulness. We plan to write a more detailed article on this subject in the near future.

There are good resources online and several books written on this subject should you want to learn more. Your pharmacist should be able to help you ensure that you are supplementing the nutrients your current medications may deplete. Many pharmacists now offer personal consultations for this sort of nutritional supplement program design.

Coal-Fueled Plant On Fannin-Grayson County Line Is One of Some 18 New Plants Planned for Texas With Inferior Pollution Controls
Set aside, for the moment, the global warming controversy (CO2), and focus on MERCURY and PARTICULATE and NITROGEN OXIDES (toxic smog) and SULFUR DIOXIDE and the already too-polluted Texas air. This is an attempt to grandfather new plants under older emission standards. Wind patterns spread the pollution. Mercury is deadly. Get informed and get involved!


XU, the largest power company in North Central Texas, is asking the state to fast-track an approval of a coal-fueled generator plant in Savoy, Texas, near the Fannin-Grayson County line. With two gas-fueled boilers already on location, the addition of a coal-fueled plant is unnecessary. Though more electricity could be generated from gas through a process known as “Gasification”, TXU is choosing to implement an inferior technology. Their choice to build a coal-fueled plant brings with it many potential threats to our communities. The transportation of the coal is just one of the negative aspects concerning this issue. The coal has to be transported to the plant via the railroad. TXU is planning to get their supply of coal from Wyoming using single purpose coal trains that will rail through Grayson County to Savoy every single day of the year. These trains are made up of 100-150 gondola cars filled to the brim with coal and completely uncovered. Pulled by four diesel engines, these trains can weigh as much as 24,000 tons and stretch as far as a mile and a half. Imagine that rolling through your town every day. Once the train arrives at the plant, the coal is dumped one carload at a time, producing large amounts of dust and noise. Communities all along the transportation route will be at risk for pollution. There’s

something to think about before the plant burns the first ton of coal. When the plant does start up, taking into account the way the wind blows, cities as far as 40 miles away will be a target for large amounts of toxic pollutants, harmful chemicals, and smog. This pollution not only affects the air we breathe, but also poisons our water and land, which poses a great threat to our health and well being. None of this has to happen. It comes to us because of TXU’s unfortunate decision to build a coal-fueled plant. What can we do about it? We can call our Mayor’s office, County Judge, State Senator, County Health Commissioner, and any other agency that is responsible for the health and safety of our communities. They found for every 1000 lbs of mercury in the area, there is a 17% increase in autism. • One of these new plants, TXU’s Oak Grove, would emit 1,440 lbs of mercury a year. (continued on pg. 41)

costs TXU less than cleaner energy, but it costs you the same. The company just reported a 31% increase in quarterly earnings, and the rates it charges customers have increased 24% in the last year, even as natural gas prices fell. Money & Politics According to filings with the Texas Ethics Commission, TXU was second in the state for lobby contract expenditures in 2005 ($3,200,000), second to only SBC Corp. In October of 2005, four of the six entities seeking new coal plants in Texas have given more than $750,000 to Texas PACs and politicians

A Done Deal? Despite TXU’s optimism, this is NOT a done deal. According to Kathryn Baecht (Ravenna, TX), of Citizens Organizing for Resources and Environment (CORE), several citizen action groups and one government group have all qualified as parties to a hearing before the Texas Commission on Environmental Quality (TCEQ). This action will contest the permit for the Savoy/Bells area plant. Groups involved are CORE, Environmental Defense, the Sierra Club, and the Texas Cities for Clean Air Coalition (includes Dallas and Houston mayors). The process for this hearing will be ongoing through April 30, 2007, when the administrative law judge of SOAH will make the decision.

“There are three positions on this issue,” says Baecht. “The No Plant, the Cleaner Plant, and the Plant As Proposed ~ we hold the No Plant position, but we are fighting to convince county commissioners and others to at least adopt the Cleaner Plant position (using IGCC) as there is no reason not to, other than TXU’s desire to grandfather a lot of plants under lesser emission standards.” The Environmental Defense group states that Texas is NOT in a current energy crisis, and that dirty, outdated, pulverized coal technology is NOT necessary. Electricity usage is projected to increase, but the two plants that have already been approved will meet our state's needs for additional power and additional pollution. Power companies like TXU are rushing to build these new plants in hopes of being grandfathered against future pollution regulations designed to protect our health.

rom where did the Fluoride come that has been in our water and toothpaste for over 60 years? First, there was an incident in Belgium where 60 people died from a fluoride spill or dump site. Our government knew of this as well as our corporations. The Manhattan Project – “A” bomb dropped in Japan – created fluoride from the process of obtaining Uranium from Uranium ore. The Aluminum industry produced fluoride while making Aluminum parts for airplanes, and the fertilizer industry produced Fluoride from making explosives and fertilizer. The government and the Aluminum and fertilizer industries formed a group to decide how to get rid of this toxin. Natural Texas Flouride During WWII it was discovered that Deaf Smith County – Hereford – Texas boys had very few cavities in their teeth. Deaf Smith County had water with Fluoride in it from natural sources. Deaf Smith also had large amounts of Calcium in the soil. At that period of time, most food was not shipped very far, so people ate local food that they grew or that they traded with neighbors. It didn’t take a rocket scientist to figure out that calcium protected the teeth and bones and health in general (there was very little high blood pressure at that time because there was calcium in the food that doesn’t exit today in most of the US and other countries). The local people also knew that if there was too much fluoride in the water and food that the enamel on their teeth would become weaker and get a motley appearance. The government and corporations knew about Hereford, so they sent scientists around the US to see how much Fluoride they could put in the public drinking water without killing the population. When that number was determined, they started selling Fluoride to cities to “prevent” cavities. If doctors and dentists complained that the toxic chemicals were harmful and didn’t prevent cavities, the corporations set up ways to discredit the doctors. Many lost their licenses to practice. Vital Role of Trace Minerals The above information is what I was able to read and document until this past week. I have been reporting for several years that trace minerals are the way to good health because they do not exist in the food supply since the land was farmed out – destroyed years ago. There is a new book about Dr Richard Olree, geneticist, by Charles Walters [Acres USA ~ eco-agriculture]. The book is Minerals for the Genetic Code. This book examines trace minerals and how they affect our genes and our health. If you don’t have zinc, then cadmium (a toxic heavy metal) will replace it. If you don’t have iodine (needed for thyroid health), then fluoride will replace iodine, and people end up with thyroid disease and doctors cut, radiate, or chemicalize the thyroid gland. This book exposes our failing health care system. Our genes are damaged by lack of trace minerals in our foods, which creates disease and instead of replacing trace minerals, our drug corporations and doctors use surgery, radiation and toxic drugs to prolong life instead of curing our bodies.

US Army Colonel Lindegren (retired) told my friend Charles Walters in the early 1930’s that “Hitler had his scientists hunt out an odorless drug that could be unobtrusively administered to the German people to make them more docile and open to suggestions.” Accordingly, chemists at I.G. Farben came up with Sodium Fluoride. Lindegren said “In the rear occipital of the left lobe of the brain, there is a small area of tissue responsible for the individual’s power to resist domination. Repeated doses of infinitesimal amounts of Sodium Fluoride will in time gradually reduce the individual’s power to resist domination by slowly poisoning and narcotizing this area of the brain tissue. In large doses, Sodium Fluoride causes paralysis and death. The drug allows a muscle to move one way, but blocks it from a corresponding reaction or contraction. But when an individual continually receives minute doses of it, the next effect is marked weakening of the will.” This information was partially revealed at the Nuremburg trials of Nazi criminals. The anatomy of the fluoride element was well understood by the Nazi concentration camp killers that used it to render docile the political prisoners (Jews) in their camps. This knowledge was readily available to our government, and the aluminum/phosphate industries. Dr Olree stated it best in his book: “Sodium Fluoride! It’s basically a poison … added to the drinking water during World War II in German concentration camps. They soaked up all their Lithium and made all the prisoners more depressed and easy to manage.” This is the reason the Jews could be put into the gas chambers with out a fight. SODIUM FLUORIDE is in all large city water systems and in your toothpaste. What I have reported is true. We have been duped by our government and large corporations. They exploit us and even make us pay for their toxic waste removal (cities have to pay for the sodium fluoride that they inject in to the water supply). Industrial Organics Steve Cooper of Dominion Farms in Denison recalls the day a man called him and promised he could sell all they could possibly produce. “Do whatever it takes just to get the label ‘organic’ on the chicken, and I can sell it as fast as you can produce it.” Cut corners, do the minimum, deceive the consumer, and maximize the profits. This was a marketing opportunity for a small family operation, struggling to make it as an organic producer of organic, pastured meats and eggs. But the answer from Dominion Farms was “No.” They had learned to raise beef, chicken, and pork the healthiest way and they would not compromise on their standards. They began this adventure after going to visit Joel Salatin’s famous (at least to organic people) Polyface farm, home of pastured poultry and salad-bar beef. Michael Pollan also went to visit Polyface, after Joel staunchly refused to FedEx a pastured chicken or steak to Michael. He didn’t believe it was sustainable (or organic) to FedEx meat all around the country. Just because we can, doesn’t mean we should, explained Joel. He was convinced that industrial organic was a contradiction in terms, recalls Pollan, who spent time on the farm and writes about Salatin and his operation in Omnivore’s Dilemma. members his grandfather telling him, before he died in the early 1970s, about the Depression years, when it was common for people to have food (the many who lived on farms or had a few animals and a garden) but no money. In your lifetime, he told Rocky, you will see people with wheelbarrows full of money, looking for food. That may very well come true ~ at least, looking for real food. Rocky and Carol have recently obtained a certification for their gradeA raw goat and miniature Jersey cow dairy. Another raw dairy south of Fort Worth recently ceased operation, and so R&C is drawing customers from as far away as Waxahachie and all around the DFW metroplex. What Can We Do? Get educated and informed. Read Pollan’s book (and there are many others on the subject). Arrange a farm tour with a local farmer. Buy their products. Join or start a co-op. Reconnect with real food. Rethink your food budget and your eating habits. Take it a step at a time. Let your elected officials know that you care about the small farmer and support legislation (or the removal thereof) that protects their land and encourages community agriculture. For example, there are too many unnecessary restrictions on the rights of small, local dairies to sell raw milk products directly to their communities. The Real Milk movement of the Weston A. Price Foundation is trying to change that. There is a lot more to talk about, but not enough space. We’ll continue to do our best to report on these subjects.

Coal-Fueled Plant On Fannin-Grayson County Line
since 2003. The top recipient of this money, Governor Perry, received 9% of the total ($66,890), according to a Lobby Watch report from Texans for Public Justice. The report also stated that most of the campaign contributions from coal-plant applicants came from TXU, which operates some of Texas' largest dirty-coal plants. TXU PACs and employees poured $753,522 into state politics in recent years. North Texas Under Siege “With these coal plants, and the Trans-Texas Corridors, and our battle with Brazos Electric over plans for high-voltage power lines, I feel like our region and our way of life is under siege,” laments Kathryn Baecht. “This is a beautiful place to live. We’re putting so much and so many at risk.” Baecht sees the energy-generation issue as a complex problem that needs a complex solution, involving cleaner plants, better alternatives, and energy conservation. “Texas wastes a tremendous amount of energy. We could all do more to conserve, but many people find it difficult to hear that message.” Visit the listed web sites, especially the Google groups location for CORE, which is a locally organized Fannin Country/Grayson Country group, and get educated and get involved. This will affect ALL North Texans. The Dallas mayor is active. Many of these plants are southeast of us, in our DFW and Red River region wind pattern. MERCURY alone is enough reason to be extremely disturbed over these plans. It seems that “ever-bigger economy at any cost” is today’s guideline. We need reason, common sense, education, citizen involvement, and strong leadership with integrity and a wise perspective to lead Texas into the future.
