1 medium tomato, chopped 4 cups low-sodium vegetable broth or water 1 1S-oz. can low-fat coconut milk % cup Cilantro, finely chopped 8 Tbs. plain Iow- fat Greek yogu rt, divided, for garnish 1. Heat oil in saucepan over mediumhigh heat. Add curry powder, cinnamon, turmeric, chili powder, nutmeg, and onion, and gently stir. Add spinach, and cook, stirring occasionally, for 2 minutes. 2. I add homemade whole-berry cranberry sau ce to leftover mashed potatoes (which get a little dry). Stir, heat, and serve. It's delicious.
