CHAPTER III
THE ICE POPSICLE
11
What is an Ice Popsicle?
The two principal kinds of non-dairy frozen treats manufactured are the Popsicle and the juice bar.
The Popsicle is 90% water. Its other ingredients are sugar, corn syrup, gum, and stabilizers. These
ingredients give the Popsicle a texture called "mouth feel" that makes it pleasant to eaten. The
sugars and stabilizers cause the pop to soften in the air so it is edible, instead of melting and
dripping like an ice cube. Flavoring is highly concentrated and is usually some traditional fruit
flavor and color. Specialty firms manufacture the flavorings and apply the chemistry needed for true
flavor and color when the flavoring is reconstituted. Some flavors, particularly citrus, also have
additives like citric acid that gives the flavor its citrus "bite." Juice bars have the same ingredients
except that concentrated fruit juice provides the color and flavor.
Popsicle makers also need sticks for the handles and printed wrappers. These are supplied by
outside sources. The Popsicle manufacturer will commission a design for the printing on the
wrapper, which is etched on a plate and used to print the wrappers. Wrappers are purchased by the
truckload, so a new product is a major cost commitment. Sticks are made of basswood by
specialized subcontractors. Sometimes the sticks are also printed with jokes, funny sayings, or
designs; they are bought by the pallet-load in quantities sufficient to last the manufacturing season.
Design of a Popsicle consists of a combination of color, flavor, and shape of the pop. Flavors and
colors tend to stay in a range of traditionally accepted fruit flavors. Molds can be made in almost
any shape and can also be filled in stages to create layered colors or be coated with outer colors and
flavors for contrast. The molds are made in a precision design process, however, and are very
12
expensive—about $60,000 for each design. The decision to make a new mold is a major one for all
Popsicle makers.
Home-made ice pops is an alternative to the store-bought ice pops is making them at home using
fruit juice, drink mix, or any freezable beverage. A classic method involves using ice cube trays and
toothpicks, although various ice pop freezer molds are also available.
The discovery of the frozen pop is attributed to an 11-year-old boy. In 1905, Frank Epperson mixed
powdered soda pop and water but forgot about his preparation and left it outside on the porch of his
home in Oakland, California. The concoction froze overnight, and the stick he had used to stir the
powder in the water stuck in the frozen liquid. Frank pulled out the whole frozen mass and found
that he had invented a new treat. He named it the "Epperson icicle." The following summer, he
made his frozen treats in his family's icebox and sold them around his neighborhood under the
shortened name of "Epsicle." Frank again rechristened his discovery the "popsicle" to show that
they were made from soda pop. The selling price for the original Epsicles was five cents per piece.
Epperson patented his treat in 1924 when he was 30 years old as the Popsicle.
In the United States and Canada frozen ice on a stick is generically referred to as a popsicle due to
the early popularity of the Popsicle brand, and the word has become a generic trademark to mean
any ice pop or freezer pop, regardless of brand or format. They are also called an ice pop or freezer
pop in the United States. In Ireland the product is also referred to as a freeze pop. In the Caicos
Islands it is referred to as an ice saver. In the United Kingdom the term ice lolly is used. Chihiro is
used as a slang term in the Cayman Islands, partially derived from chill. Ice block or icy poles are
used in parts of Australia and New Zealand.

CHAPTER IV
THE ICE POPSICLE INDUSTRY
14
The Industry
The economy of the Philippines is the 39 th largest in the world, according to 2013 World Bank
statistics, and is also one of the emerging markets. The Philippines is considered as a newly
industrialized country, which has been transitioning from being one based on agriculture to one
based more on services and manufacturing. According to the International Monetary Fund
estimates, the 2015 GDP (purchasing power parity) is $751.770 billion. Goldman Sachs estimates
that by the year 2050, the Philippines will be the 14 th largest economy in the world; Goldman Sachs
also included the Philippines in its list of the Next Eleven economies. In 2014, the Philippines were
Asia’s second-fastest growing economy next only to China. According to HSBC, the Philippine
economy will be the 16th largest economy in the world, 5th largest economy in Asia and the largest
economy in the Southeast Asian region by 2050.
With about 7,107 islands lying off the southwest coast of the Asian mainland, the
Philippines is one of the largest island groups in the world. It is strategically located as a gateway to
the East and Southeast Asian market, and well-poised to be a staging area for local food and
beverage processors that seek to penetrate the lucrative market.
Being the nation’s capital, Manila is the seat of administration and the pinnacle of
commerce and industry, culture, the arts, and education. It is the most important city in the
Philippines. Manila has been combined with other major cities and municipalities to form what is
now popularly known as Metro Manila.
15
The Philippines is also a key market in Southeast Asia for standard and gourmet U.S. cheese
products. Traders are optimistic about the growing market potential of gourmet cheese products due
to the booming Philippine economy. Standard cheese dominates total sales, but gourmet cheeses are
gaining popularity and command very high prices.
The ice cream industry in Philippines had advance over the years. The strategic moves of the
manufacturers in the past years helped boost the consumption of ice cream in the Philippines. Ice
cream had been one of the comfort food for most of us. Especially during the summer where it is
really hot. The Leading brand Selecta was able to convince consumers to indulge in ice cream with
its affordable price. They created the Cornetto brand, which became very popular in the Philippines.
Also we had the brand nestle which became also very popular because of the different products that
it’s offering. Nestle opened its product to the public where their product became affordable.
Ice cream's origins are known to reach back as far as the second century B.C., although no specific
date of origin or inventor has been indisputably credited with its discovery. We know that
Alexander the Great enjoyed snow and ice flavored with honey and nectar. Biblical references also
show that King Solomon was fond of iced drinks during harvesting. During the Roman Empire,
Nero Claudius Caesar (A.D. 54-86) frequently sent runners into the mountains for snow, which was
then flavored with fruits and juices.
Over a thousand years later, Marco Polo returned to Italy from the Far East with a recipe that
closely resembled what is now called sherbet. Historians estimate that this recipe evolved into ice
cream sometime in the 16th century. England seems to have discovered ice cream at the same time,
or perhaps even earlier than the Italians. "Cream Ice," as it was called, appeared regularly at the
table of Charles I during the 17th century. France was introduced to similar frozen desserts in 1553
by the Italian Catherine de Medici when she became the wife of Henry II of France. It wasn't until
1660 that ice cream was made available to the general public. The Sicilian Procopio introduced a
recipe blending milk, cream, butter and eggs at Café Procope, the first café in Paris.

top ice cream companies mainly, Selecta and Nestle have been known in the ice cream industry for
years. These 2 are one of the top selling ice cream companies in the Philippines. Selecta and Nestle

products, ice cream, frozen food, pet foods, and snacks. One of their largest profits making industry
is the ice cream industry which makes 25% of their yearly profit. This company made a profit of $10

Nestle owns over 2000 brands. The other, Ice Cream House is a rapid growing ice cream business
that caters affordable classic ice creams. It takes simple ice cream to a casual style dining
experience. The Ice Cream House offers products and services that suits the youth due to its
simplicity and unique Filipino flavor ice creams yet what makes it different is that the company
changed the view of typical Filipino ice cream kiosks or stands. The company developed ice cream
establishments were customers can stay, enjoy and eat their products. Another international
competitor is a Korean ice cream company called “Binggrae.” Binggrae can also be found in
increasing numbers of stores around the world. They have a product, a Popsicle called “Melona.” It is
also sold in various countries of the world, including United States, Australia,
Brazil, Singapore, Paraguay, Philippines, China, Argentina and New Zealand. Melona and other
products from Binggrae is found usually in Asian markets or Korean retail outlets only. Melona has
continued to keep its popularity among many generations due to another growing industry, which is
the K-pop industry. It has plenty and colorful fruit based flavors, which includes Banana, Strawberry,
Melon, Honeydew and Mango popsicles.
Despite of the competition in the ice cream industry, Frozen Fruitti Jelly introduces an innovative
way of making popsicles. The company focuses only in a specific product yet adds variety to it to
satisfy a certain target market. The company recognizes that in the ice cream industry there are a few
healthy selections in these notable ice cream companies. The company develops products that can be
convenient and innovation is a must for the company in future years to come. Sorbetes is also known
as "Dirty Ice Cream." This consists of very Filipino flavors such as ube, cheese, chocolate, etc. This
is commonly sold on street corners and usually the roams around public areas such as recreational
establishments, parks, subdivisions, etc. Sorbetes is made from simple ingredients that is kept in a.
traditional style cart. The cart is also well-known for its colorful and native design. It is also applies
labor when moving the cart to different places which can take a lot of time compared to the more
modern and convenient bicycle carts that roams faster in places. Sorbetes is also considered as an
iconic Filipino snack or remedy for a very hot weather. The price is much cheaper due to its portion
size and quality of the ingredients. Sorbetes also brings unusual product accompaniment but loved by
20
Filipinos such as putting the dirty ice cream in a soft bun which makes it quite heavy compared to its
competitors however, brings satisfaction to a hungry appetite. Finally, Sorbetes has no innovative
touch compared to its competitors but keeping it tradition seems to make it more attractive to
unfamiliar palettes such as foreigners.
21
CHAPTER V
THE MARKET
22
Market size and growth
The food cart will be positioned inside the University belt near “The Pit” Asturias so the main
target market will be students in the U-belt. There were 26 colleges and universities around the U-
belt but most of the target customers will come from the University of Santo Tomas that has a
population of approximately 44,000 students and above. Due to the alteration of first day of classes
of the University of Santo Tomas together with the other schools, they will still have classes in
summer. This made the company decides to enter the market and position it near UST. Since it is
summer, the demand for something refreshing and cool will increase so there is high prospect that the
business would be patronized by many.
Target market
The target markets of the company were mainly students from University of Santo Tomas and
individuals from other schools around the U-belt in Manila. Since University of Santo Tomas
changed their classes to July-May, the company sees this as a big opportunity to choose the UST
students and the students from the other school as their target market. These months have the
hottest climate in the Philippines so the demand for something refreshing and cool would greatly
increase during these months.
There were 26 colleges and Universities around the U-Belt and the whole population of Thomasian
students and those students taking their summer classes from other school goes approximately a
hundred thousand and above.
The first cart of Frozen Fruitti Jelly will be located at the left side of Jollibee Dapitan, Asturias near
The Pit restobar.
23
Map of colleges and universities located in the U-belt.
Market Demographics
The students’ age were around 12 years old to 21 years old including the high school level and
college students from University of Santo Tomas. These students came from different regions so
there are some who lives in an apartment, dormitory, condominium and etc. The social status of the
students was a combination of upper class and middle class. The middle class has greater number of
population compared to the upper class. The middle class prefer foods that has reasonable and
affordable price. One evident to support this was the influx of customers in the carinderias around the
UST. The street foods are also “in” with the students. During break time and lunch, the prominent
large number of students can be seen roaming around and buying different street foods from food
carts around UST.
Trends
24
Ice cream industry is now very popular in the Philippines. The consumption of ice cream here in the
Philippines boost because of innovative ideas and concepts of many manufacturers. The leading
brands in the industry are Nestle and Selecta. Comparing the two companies they both produced
brilliant products to lure consumers into buying ice cream with different strategies on how to sell it.
Selecta introduced Cornetto brands to consumers and eventually convinced them to indulge
themselves with its reasonable and affordable price which you can enjoy every weekend bonding. On
the other hand Nestle Company produced low cost ice cream for the middle and low income
consumers. And because of its lowered price Filipinos tend to consume it not only during special
occasions but also on a daily basis.

CHAPTER VI
OPERATING PLAN
26
Location
The company’s product will be put at Asturias Street Sampaloc, Manila, near the University
of Santo Tomas. Asturias is a place in the North of Spain, preferably known as the “Principality of
Asturias”. The history of Asturias is linked to the symbol of the foundation and rebirth of the New
Spain.
The Asturias Street has a wide road and at this area, there are many food and beverage
business that are patronized by many UST students. There are also many food carts that chose
Asturias as their place to sell their foods. Most of the foods being sold by these food carts are

also a place for students to buy any school supplies they need for school.
27
Facilities, layout and design
Umbrella
Sourcing
28
The company will only buy ingredients from reputable suppliers and fresh from farms that don’t
use pesticides in their fruits.
T & H Shofitters Corporation will be our supplier for the Stainless metal ice cream cart. Whirpool
will be the supplier for our refrigerator and Tramontina for other tools and equipment. Packaging
containers will be from Powerace Corporation.
29
Slice fresh fruits
Puree fruits
Freeze overnight
30
Inventory management and control
We buy our product supplies including our fresh fruits for every three days. The fruits that will be
cooked and sold for the first day will have to be ripe, while the other stock of fruits that will be
cooked and sold for the next two days shall have to be unripe.
Unprepared gelatin has an indefinite shelf-life as long as it is wrapped airtight and stored in
a cool, dry place that is why we make our gelatins fresh.
To avoid clumping the dry unflavored gelatin should be mixed with a little cold water first
for 3 to 5 minutes to moisten and separate before adding hot water.
We store our gelatin desserts in a covered container to avoid the formation of a thick
rubbery skin on the surface.
Too much sugar can inhibit gelatinization. The more sugar in the recipe, the softer the
resultant gelatin will be.
Since we are using sugar with unflavored gelatin, we need to mix the sugar and gelatin first
before dissolving.
Firmness varies on the ratio of water to gelatin and temperature. We will melt down (gently
using a double-boiler) and re-chill gelatin several times before the mixture loses its
thickening ability.
To suspend fruits, meats, or vegetables in gelatin, chill until it is the consistency of cold egg
whites. Then mix in the additions and chill until completely set.
We need to make sure that we get to drain all solids of their liquid before adding to gelatin
to avoid watering down the gelatin.
31
Two hours of chilling should be enough for standard clear molds, while it may take up to 4
hours for those with additions. Layered gelatins will take longer, since each layer must be
individually chilled and firmed before adding the next layer.
We cannot bring the gelatin mixtures to a full boil or we will risk losing its thickening
properties.
We are going to rinse the cup with cold water before unmolding the gelatin to easily center a
mold on the cup.
Maintenance
The company’s maintenance is important. Everything should be monitored starting from the
cleanliness of the cart, the presentable and attractive food attendant and the most important: the
maintenance and the cleanliness of the food. It is important to maintain those things in order for the
company to meet its goals easily. Without maintaining the product, service, safety and sanitation,
and the consistency of the operations, the company will be affected. In accordance with the food
sanitation, there is a Hazard Analysis Critical Control Point System (HACCP System) that would
guide the company to establish and maintain food safety and sanitation. To maintain the service, the
company should hire an attendant with pleasing personality and already have an experience with
related or same job.
32
CHAPTER VII
THE MARKETING PLAN
33
The Market Needs
Frozen Fruitti Jelly’s range of target market is huge in fact it can cater to almost all types of
consumers. Since the business is just an entry level in the ice cream industry, the company chose to
pick the Thomasian students as their target market. Due to alterations in the first day of classes, the
thomasian students still have their classes in summer. This opens an opportunity for the company to
enter the industry. Stress is the most common thing that students especially college, usually
encounter. They have lots of thesis, feasibility studies, defense, projects, reports and etc. They do
multi-tasking and sometimes they only have few hours to sleep which can greatly affect their health
condition. The company also noticed that most of the foods being offered around and inside the
campus were not so nutritious. Some of the products have preservatives and artificial flavors added.
This problem gave an idea to the company to make something comforting, refreshing, cool and at the
same time nutritious. Since the ages of the students ranges from 12-21 years old, most of them love
sweets so the company made the product just enough sweet to pass in their palette. Frozen Fruitti
Jelly would satisfy one’s craving not only for sweets but also the refreshing tastes of fruits. It is well-
liked by kids and people who like to unwind. The industry’s target market became wider because
they open the door to new market by accepting as suppliers to parties, conventions, catering and etc.
Nowadays, due to hectic schedule and stress being faced by people brought by paper works,
activities and etc. most of them preferred foods that are convenient, hassle free, satisfying and
affordable. Because of the growing demands in these, fast food chains and many other
establishments entered the food industry to give solution to the problem. In some point they were
able to fulfill the growing needs but one thing they failed to consider and happened to be the most
important thing was the health of the consumers. More of the foods and drinks being offered
nowadays were composed of artificial flavorings and preservatives. We all know that these two
ingredients are not healthy to eat and sometimes can cause bad effects in our health. What the
market needs now is something convenient, hassle free, satisfying and affordable but at the same
time healthy.

consisting of fresh sliced mangoes, milk, and a mixture of clear gelatin to make the consistency
Jell-O. Same goes with the "Strawberry Avalanche" is clearly made of fresh strawberries, milk and
a mixture of clear gelatin. Lastly, Melon sunrise contains fresh melon slices and the usual milk and
clear gelatin mixture to have the same consistency with the other popsicles. These popsicles are
light, simple, and refreshing. The products are blended to suit the palettes of the customers due to
its amazing components that make the concept of ice cream and Jell-O products into one special
and rare product. The Popsicle has a very smooth texture and creamy consistency, however the use
of sugar is mostly fructose which is the natural sugar found in fruits. This effect on the product
retains the fruity quality. The customers will be able to consume healthy popsicles with a hint of fun
and pleasure while consuming whatever Popsicle of their choice. Lastly, the company wants to
showcase the natural content and benefits that one can get from consuming the popsicles. The
product focuses on the natural side or refrains from using artificial flavorings so that it will maintain
its natural flavor and taste which make these popsicles quite genuine to other frozen products
nowadays.
Price
The price of the product for the first 3 flavors would be 20 pesos each for the first year. After
one year the prices of the product will increase to 23 pesos and the company will add a new flavor
of Popsicle Jelly having the same price. In the third year of the business, the prices of the product
will retain and the company will add a new product which is the fruity flavored Pannacotta. The
company’s generated income will be used in maintaining and improving the business.

Place
The company’s product will be put at Asturias Street Sampaloc, Manila, near the University of
Santo Tomas. It is a good place for the company to sell their Popsicle product, for the only
competitors at this area are the one’s selling shakes or smoothies. The product will be available to
many students, for there are many of them who come to Asturias, to eat lunch and snacks.
- Competitive advantage
Gelatin based products are not commonly marketed. It is usually sold on malls and groceries though
the business planners are to introduce it in an innovative way and affordable price around the
university belt. The position of food cart being around the universities gives the business an
advantage since students’ academic schedules are now aligned with other countries resulting to
classes on March to May. The food cart having a bike attached to it can roam around the area
making people see and know about it. Also, the food cart’s bright colors and sound system will
attract more attention as it circulated the university area. The company provides the customers a
healthy alternative of cold snack because the product is made from natural ingredients. In addition,
the attendant is a well-trained hospitable person who wears an eye-catching uniform. Lastly, the
company can cater to events and other functions.
