After soaked- Reserve Liquid!!!) 1 c. Miso, (Red Preferred) 1/4 C. Lemon Juice 1/4 C. Tamari 1/4 C. Olive Oil 1 t. black pepper 1# Spinach, Roughly chopped 1 1/2 C. Carrots, shredded 3 C. Shiitake Mushrooms, sliced 1 C. Scallions, sliced thin 3 T. Garlic, Minced 3 T. Ginger, Minced In a large bowl, combine first five ingredients. Toss tofu and seaweed in to marinate. Set aside. Prep the rest of the ingredients. Mix together and steam in a shallow perferrated hotel pan for 3-4 minutes, or until the mushrooms are slightly cooked. Add to Miso mixture. Taste! Season Accordingly.
