3 heads red and/or green cabbage, shredded (# 15 on slicer) 4C. Carrots, shredded 2# Red onion, sliced thin 1 Bu. fresh parsley or cilantro, chopped Dressing: 6C. Veganaise 1C. Pineapple Juice 2T. Lemon Juice 1T. Salt 1t. Black or white pepper 1t. Raw sugar or fructose 1t. Onion powder Prep Vegetables. Put into a large plastic prep tub. Make dressing. Add to veggies. Coat well. Let sit for at least 1 hour. Re-Mix. Check to see how much liquid soaked out. If it looks really runny, drain 2 off, add more veganaise. If looks O.K., check seasonings, adust accordingly. When you package, but try not to package too much of the sauce with it.
