1 C vegetable or veggie chicken stock powder 8 C millet 3 bu green onions 4 C olives, sliced 6 C carrots, grated dressing: 1 C red wine vinegar 1 C freshly squeezed lemon juice 1/2 C minced garlic 1-1/2 C fresh chopped parsley 1 C fresh dill 2 T tahini paste 4 C olive oil 2 T sea salt 2 T lemon pepper - Rinse millet, add vegetable powder & steam with water. Transfer to a large plastic prep tub and chill in walk in. Prep vegetables. In separate bowl, whisk vinaigrette together. Add veggies and vinaigrette to cooled millet. Let sit for 2 hour. Check seasonings and adjust accordingly.
