1/2 g whole wheat couscous , dry 3 Qt. water 3 T sea salt 2 C lemon juice 3 T garlic, minced 3 Cups scallions, chopped 2 C fresh mint leaves, minced 2 C olive oil 10 tomatoes, diced 8 Cups parsley, chopped 1 T veggie pepper 5 cucumbers, washed, seeded and cubed- DO NOT PEEL!! Put couscous and salt into a 4" hotel pan. Boil water, add to couscous, cover and let sit for 7-10 minutes. Fluff with fork or spoon. Let it cool. Transfer to a large plastic prep tub. Prep and add remaining ingredients. Let sit for 2 hour. Check seasonings and adjust accordingly.
