CORN AND PEPPER SALAD

Plu# 4288 1 # dry red lentils, steamed 5- 6 min, or until done, spread out and chilled quickly (put in freezer) 2 gal. frozen corn 3 bunches cilantro, chopped fine 4 red onions, sliced* 4 bunches green onions, chopped 3 # red bell peppers, julienned 2 C. Lime Juice 1/2 c. lemon juice 3 T veggie pepper 1 T sea salt 1 T. cumin 1T. chili powder 1C. Safflower Oil

Prep vegetables. Put in large plastic salad tub. Add lentils. Make dressing. Gently fold dressing into vegetables. (Best if made day before so corn can thaw. If serving same day, thaw corn)
