Toast in small skillet:
1.25 tsp sea salt 1.25 tsp black pepper 3 Tbsp curry mix 1 large red onion, diced 1 cup carrots, shredded 2 cups vegenaise 2 tsp garlic, minced 2 tsp lemon juice 1/2 bunch cilantro, chopped In a large bowl, combine all ingredients. Fold together. Add cooled potatoes. Mix well and let sit for at least 2 hour (or as long as overnight), covered, in refrigerator. Be sure to taste. Adjust seasonings accordingly, if needed.
