COOKING SPECIFICATIONS: Steam potatoes until fork tender. Sprinkle with
salt, spread on sheet pan and put in walk-in. 10 #s red potatoes washed and cubed 2 bunches green onions chopped 1 bunch celery diced 1 red pepper and 1 green pepper chopped Mix seasonings in separate bowl 2 Tbsp sea salt 3 Tbsp lemon pepper 5 Cups dill, yogurt sauce (recipe follows) Gently fold dressing into potatoes, add vegetables. Dill-Yogurt Sauce 1 Qt. Soy Yogurt, Plain 4T. Fresh or 2T. Dried Dill 2T. Lemon Juice 2T. Fresh or 2t. dried Mint 2t. salt 1T. dried chives 1T. garlic powder 1T. onion powder Combine all ingredients in a large bowl and whisk until blended well.
