CHILLED MELON SOUP

10 ripe canteloupe 10 C. fresh mango, papaya or passion fruit 5 C. orange juice concentrate 2/3 C. honey 6 C shaved ice 5 C soy milk fresh mint for garnish

Have all ingredients well chilled. Cut canteloupe in half. Scoop out and discard the seeds. Scoop out flesh and put in robot coupe. Mango, papaya, or passion fruit would need to be peeled and cubed and put in robot coupe. Add the juice, honey, and ice cubes. Blend until creamy. Add the soy milk and blend again.
