Grilled Green Beans

wi th h a r i ss a

Most foods are improved by proximity to charcoal and smoke, and that includes those that dangle from beanstalks. The only trick is not losing half of your green beans to the fire, a job made easier with one of those mesh cages for grilling smaller foods. Me, I just do my best to keep them perpendicular to the grates and have my average losses down to about three beans. A quick toss in a vinaigrette spiked with spicy North African chile paste, aka harissa, really livens things up; in a pinch, you could use the same amount of Sriracha, or just Tabasco with a chopped garlic clove. Or, if you prefer, skip the heat—these are still really good. Serves 4 Kosher salt 1 pound green beans, trimmed 2 teaspoons vegetable oil 1 tablespoon red wine vinegar 1 tablespoon olive oil 1 teaspoon harissa

salt. Add the beans and blanch until just crisp-tender, 2 to 4 minutes. Drain, and plunge the beans into the ice water for 2 minutes to stop the cooking. Drain the beans, and pat dry with kitchen towels.

1 Preheat a grill or grill pan to high heat. 2 Prepare a large bowl of ice water; set aside. Fill a large saucepan halfway with water and bring to a boil over high heat. Season the water generously with

3 Put the beans in large bowl and toss with the vegetable oil. Using tongs, arrange in a single layer on the grill and cook until lightly charred, 3 to 5 minutes. 4 Whisk together the vinegar, olive oil, harissa, and 1/2 teaspoon of salt in a large bowl. Add the warm beans, toss, and serve warm or at room temperature.

Uncorked
One Man’s Journey Through the Crazy World of Wine
Marco Pasanella
Marco Pasanella’s story of one man who decided, at age 43, to change his life by opening a wine shop is a behind-the-scenes memoir through the world of wine that will captivate wine lovers and neophytes alike. As Kitchen Confidential and Waiter Rant explored the front and back of the house at restaurants, Uncorked offers a peek behind the curtain of the wine world. Pasanella takes the reader into the underbelly of his store and the industry, which is steeped in history yet fanatical about technology, and brimming with larger-than-life personalities. Infused with rich details of his historic waterfront building in New York City and his sojourns in Tuscany, Pasanella’s memoir is one of transformation through a project many fantasize about but few commit to. A colorful cast of characters rounds out this fascinating journey through the world of wine.
MARCO PASANELLA is the proprietor of Pasanella and Son Vintners, which opened

in the South Street Seaport area of Manhattan in 2005. The shop has been included in top-ten lists in New York magazine and the Village Voice, and has received praise in Food & Wine, Elle, and other publications. Previously, Pasanella designed hotels, including the Maritime in New York, and his furniture and houseware designs are on display at the Cooper-Hewitt National Design Museum. A graduate of Yale, he taught for 13 years at the Parsons School of Design. He has been featured in and has written for numerous publications, including Esquire, GQ, Vogue, Vanity Fair, and the New York Times.

The fish guy vanished. My wife and I had barely managed to scrape together the down payment on our waterfront wreck of a five-story industrial building in lower Manhattan’s old Fulton Fish Market. But without the rent from the fish guy we weren’t going to be able to live there, much less make any improvements (windows would be nice), unless we found a new tenant to replace him on the ground floor. Months passed until we finally found the perfect one: an enthusiastic, would-be wineshop owner willing to take over the space. The only problem was that he was me.... In the end, it wasn’t just romance that convinced me. The neighborhood was changing quickly. Directly behind us, the entire block was being beautifully renovated into high-end apartments. Our South Street Seaport zip code was growing tremendously and now had the highest per capita income in New York City. Better yet, there was no wine store within half a mile of us. And so we leaped.

Foraged Flavor
Finding Fabulous Ingredients in Your Backyard or Farmers’ Market, with 84 Recipes
Tama Matsuoka Wong with Eddy Leroux Foreword by Daniel Boulud
Move over pickling and preserving, foraging is the food world’s latest hot trend, and Foraged Flavor, by the forager and the chef de cuisine of the world-renowned restaurant Daniel, shows home cooks how to get in on it. Now more than ever Americans want to know where their food comes from, and, foraging—once relegated to natural-foods extremists—has moved into the mainstream. From food-world darlings David Chang and René Redzepi discussing the idea of foraging in Central Park to home cooks finding purslane in their backyards or nettles at farmers’ markets, the whole country is embracing this practical, delicious, back-to-the-land trend, a natural extension of the locavore movement. Foraged Flavor is the perfect guide for any dedicated or would-be forager, with plenty of tips for finding 72 edibles and 84 recipes for enjoying them. Tama Matsuoka Wong and Eddy Leroux are the dream team of wild-food experts. Tama is the forager for Daniel and Eddy its chef de cuisine. They combine their expertise in Foraged Flavor, a seasonally organized field guide and cookbook. Tama walks readers through common wild foods, describing the hidden pockets where anise hyssop grows or the best time of year to search for wild garlic. Eddy gives simple recipes for every find, including Cardamine Cress with Fennel and Orange Vinaigrette; Braised Beef with Onions and Dandelion; and Violets, Strawberries, and Crème Fraîche. With 25 botanical illustrations, 50 color photographs of foraged ingredients, and tons of field-tested know-how, Foraged Flavor will be an indispensable guide for cooking enthusiasts.

My first love has always been food, but in the search for ever more interesting and challenging cuisines I discovered my second love: learning about people and their cultures. Nothing pleases me more than to be traveling in some foreign place, to stop at a little stand on the street for some amazing dish I’ve never heard of, and suddenly to find myself engaged in a conversation with a complete stranger. I believe that in any country, what you see and taste on the street is the best food because it’s usually one family recipe handed down and perfected over generations. There’s a huge wow factor. No frills, no service, all the focus is on the food.
In this book I share recipes and techniques I’ve picked up along the way in my thirty years of cooking and traveling, and I tell stories about some of my most favorite journeys. By the end of our time together my hope is that you will have a brand-new bag of kitchen tricks. Maybe you’ll even be inspired to take your own street food tour to some exotic place!

Peach-Raspberry Crisp
ServeS 8
Raspberries taste fantastic with the cinnamon in this crisp oatmeal-streusel topping. If peaches are not at their best when you shop, nectarines, apricots, or plums make a fine substitute. I serve this with a scoop of vanilla gelato; my son Nik’s favorite dessert, raspberry gelato; or whipped cream. 1 Set the oven rack in the lower third of the oven.

Topping
1 cup all-purpose flour 1 cup firmly packed light brown sugar
1 ⁄2 1 ⁄2 1 ⁄2 1 ⁄2

Preheat the oven to 375˚F. Set a 12 by 9-inch or 14 by 10-inch oval baking dish on a baking sheet lined with parchment paper or a nonstick silicone baking mat.
2 To make the topping: In a medium bowl, use a fork

teaspoon coarse salt teaspoon ground cinnamon cup (1 stick) cold unsalted butter, cut into 1 ⁄4 -inch cubes cup old-fashioned rolled oats (not instant)

to stir together the flour, brown sugar, salt, and cinnamon. Add the butter, and using your fingertips, quickly work it into the dry ingredients until pea-size crumbs form. Add the oats and toss gently. Set aside in the refrigerator.
3 In a medium bowl, toss together the peaches,

2 pounds peaches, halved, pitted, and sliced into 1 ⁄ 2 -inch-thick wedges 2 (6-ounce) baskets raspberries
1 ⁄3

raspberries, sugar, cornstarch, lemon juice, and salt. Transfer to the gratin dish. Sprinkle the topping mixture evenly over the top.
4 Bake, rotating the baking sheet about two-thirds of

to 1 ⁄2 cup sugar

3 tablespoons cornstarch 2 teaspoons lemon juice 1 teaspoon coarse salt

the way through the baking time, until the juices bubble up and the topping is golden brown and very crisp, 45 to 50 minutes. Let cool for 15 minutes before serving.

In fact, all of her dishes appeal to anyone looking for flavor-forward food, including Fennel Salad with Grilled Cheese Croutons, Broccoli Rabe Fettuccini, and Popcorn Pudding with Butterscotch Sauce. The Dirt Candy Cookbook will break ground in the cookbook category, setting a new standard with its hip look and fresh approach.

Kyle Schuneman with Heather Summerville; Photographs by Joe Schmelzer
The hottest young interior designer in the industry shares inspiration and helpful how-to advice in this must-have guide to making your first home the most stylish and livable reflection of the way you want to live. Modern interior décor is all about creating a sense of lifestyle—no longer do people want to decorate with just stuff, but with objects that have a story or that help them live well. Kyle Schuneman, the 25 year-old wunderkind and sweetheart of the design world, has proven that it’s possible to use unique decor choices to create comfortable, fabulous spaces on any budget. The First Apartment Book will feature ten homes from across the United States, where Kyle cleverly worked with residents to translate their visions into real life. Whether you’re an art fan who wants to incorporate NYC cityscapes or a collector in LA seeking to display your finds, Kyle shows how you can seamlessly blend the things you love into a sophisticated design scheme. Thirty do-it-yourself projects also allow you to customize your space, especially when you refuse to let rental regulations or limited budgets stand in the way of blue-sky nesting dreams.

The San Francisco flower markets are the best in the country—and Megan has quite the green thumb. But thanks to a grueling work schedule and nonexistent outdoor space, having a garden was out of the question. Even houseplants were too much of a commitment at this point. I wanted her to have the option of indulging in the city’s rampantly available fresh flowers when possible, though, so I constructed a pseudo-chandelier above the dining room table with fishing line and glass bubble vases from CB2. When empty, they caught the sunlight and almost looked like lightbulbs. When filled with flowers, they were simply stunning. In either case, they helped ground the bistro dining table, so it had a sense of permanency. Plus, with such a small tabletop, there was no surface space to spare come dinnertime, so this saves Megan from ever having to waste room on a centerpiece again—she now has a go-to floating one at the ready.

Cute ProPortions
Drawing supercute means more than simply drawing supersmall. The proportions have to be cute, too. Now, you might be thinking, “Cute proportions? No one can create proportions that convey cuteness! It simply can’t be done, my good fellow!” Yes, you can draw a wonderful character, with cute features, and an adorable costume—but if the proportions are off from Kawaii standards, then there is no way it will ever be supercute.

ClassiC Kawaii ProPortions

11/2 heads tall This is the “it can’t miss” gold standard of cute proportions.

2 heads tall Hmmm. The character is getting a little on the tall side. Although this is pushing it a bit, it still makes it under the limbo stick.

3 heads tall Hit the buzzer, and send this contestant back to Kalamazoo. This loon looks like a Kawaii character on steroids.
