Cuisine by Marco Silva, LLC 1998 - Present Private / Personal / Catering Chef As a private chef, Chef Marco Silva has worked in private residences throughout New York City, Boca Raton, Dallas, Salt Lake, and Park City. He develops a keen awareness of his client's needs, as well as their particular likes and dislikes as far as food is concerned. He establishes daily meal menus, providing all shopping, food selection, preparation, and execution of the culinary cuisine. He makes it a point to always understand his client's intolerances for specific ingredients and what special dietary requirements may be required for the family and their guests. He regularly supervises other cooks and servers in their homes. As a personal chef, Chef Marco Silva prepares pre-cooked dinners and cook-on-site meals in the homes of his clients. He plans menus, packages meals, manages quality control, and assists his clients in minimizing food waste. Chef Marco's "Refrigerator Makeovers" and "Kitchen Revamps" (re-organization of kitchen from spoon to spice) services help keep his client's organized in the kitchen and cooking happily. As a catering chef and special events coordinator, Chef Marco Silva has planned, orchestrated, and cooked for corporate functions, weddings, private cocktail parties, birthdays, gallery openings, and much more. He is typically responsible for hiring sous chefs to support his team, as well as servers, butlers and bartenders. Chef Marco Silva easily caters events as intimate as two guests to upwards of 800 people...with success and charisma! Wight House Reception Center 2011 Consultant/Interim Executive Chef Consultant and interim executive chef at the Wight House Recpetion Center. As consultant, conducted business and competitive analysis; developed new menus and associated pricing; trained service staff on proper serving etiquette; worked with management team to establish new service agreements, invoicing procedures, and general branding expansion; re-organized kitchen and prep areas for more efficient and effective use of space and resources. As the interim executive chef trained sous chefs and line cooks to fine tune skills to support large events; established a higher level of food quality; set standards for food presentation, both in reception design and sit-down garnishing and embellishments. Cuisine preparation, supply/order management, employee morale and time management, and overall look and taste of food service round out his responsibilities. Cooked for and supported over 400 events in 2011 ranging in size from 50 to 800 guests. Regularly serviced four to five weddings or events on three levels of the reception center all hosted on the same day. The Woods on Ninth 2010 - 2011 Executive Chef Arranged, planned, and executed all culinary aspects of events at The Woods on Ninth. Prepared complete sit-down luncheons and dinners for over 200 guests at a single setting. Catered reception events for upward to 700 people. Was recognized for his service and outstanding food presentation, flavor, color and design. Demonstrated consistently, exceptional culinary skills and a willingness to exceed all expectations of brides (and their mothers), guests, and clients. Designed custom menus for clients on a moments notice. Executed all facets of the kitchen from prep staff, to hostesses, to servers, outside caterers, and vendor relationships.
