PINEAPPLE GINGER DRINK

Makes about 5 cups

The sight of a pot of boiling tea and the aroma of fruit and herbs wafting from it was a common
experience during my childhood. My mom would take ginger and pineapple peels and steep
them together with dried fruits and herbs to get a second use out of ingredients. Those drinks
were delicious and inspired me to make my own juice blends at home. This is my version that
doesn’t use trimmings, but it still reminds me of the flavors my mom put into those teas. I like
mine chilled, not too sweet, with a good amount of lime and club soda, but how or when you
enjoy this is completely up to you.

8 ounces fresh ginger, peeled


1½ pounds fresh pineapple, peeled, cored, and coarsely chopped
½ teaspoon kosher salt
4 cups hot water
Juice of 1 lime
1 cup honey, or to taste
Club soda, for serving (optional)

Use the flat part of a chef ’s knife or a heavy pot to smash the ginger.

In a blender, add the ginger, pineapple, salt, and 2 cups of water and blend on high until well
incorporated. Pour through a fine- mesh sieve into a pitcher. Rinse the blender with ½ cup of
water and add it to the pitcher. Stir in the 4 cups hot water and the lime juice. While it’s still
warm, sweeten the tea by whisking in the honey. The tea can be enjoyed hot, or chilled and
served with club soda.
