Chicken Marsala!

6 chicken breasts trimmed Flour for dusting 2 tbsp. olive oil 1/2 small red onion minced 1/2 red bell pepper minced Dust chicken breasts with flour. Sauté chicken with red onion, bell pepper, garlic and salt and pepper in olive oil and 1 tbsp. butter. When the chicken is browned, sprinkle it with beef broth. Reduce the heat to a simmer. When the chicken is done remove from pan and keep warm. Add Marsala wine to pan and bring sauce to a boil, toss in some tomatoes, mushrooms, salt and pepper. Place the chicken back in pan and reduce heat. Add 4 tbsp. of butter while stirring the chicken around and sauce becomes creamy. Place on a serving platter and top with fresh chopped parsley.
