Sicilian Dolce Oranges!

6 large, ripe oranges 6 Lazzaroni amaretto cookies 3/4 cup + 2 tbsp. powdered sugar 2 tbsp. Grand Marnier

1/2 cup almonds - toasted and ground fine 1cup heavy cream whipped stiff Bunch of fresh mint

To toast almonds place them in a dry nonstick skillet over medium heat and toast to a light brown. When cool grind them finely. Take the four prettiest oranges and cut their tops off. Carefully remove the pulp. These will be used as bowls. Squeeze the remaining oranges and retain their juice. Combine almonds, sugar, juice, Grand Marnier and mix well. Gently incorporate mixture into whipped cream. Spoon mixture into the hollowed out oranges and arrange the oranges on a serving dish. Chill in the refrigerator for two hours. Serve on a bed of fresh mint with crushed amaretto cookie over each orange. BUON APPETITO
