We live in a global world where ingredients are cultivated and flown to us; but there are a few ingredients that make an appearance for a brief shining moment every spring and chefs clamor to secure them. We will discuss the seasonality of various ingredients and create several special dishes WINE PAIRING including ramps, fiddleheads, fava beans and other spring beauties.

Sometimes a light soup and sandwich is all it takes to satisfy you. As the weather gets warmer the last thing you are looking for is a big heavy meal. In this class we will start with our own vegetable stock WINE PAIRING and build a spring inspired soups, along with a creative condiment spread to build a delicious sandwich.

In these classes we will practice making a yummy brunch for Mom on Mother’s Day. We will cover several cooking techniques including: poaching, frying and sautéing; in addition to knife skills. Recipes will include Croque Madame with a Poached Egg, Crepes with Warm Fruit and Mascarpone, Sweet Polenta Bites with Honey and a Fruit Smoothie.

Sauce Class is back by popular demand: Did you know that the person responsible for making the sauces is one of the most important members in any kitchen? It is a component that can make or break any dish. Chef Maria will demystify sauce making and teach you how to make at least three derivation sauces from the five Mother Sauces. Once you learn these simple classic sauces you will have the confidence to add other elements to them and the sky is the limit!

We will try to answer this age-old question and create some fun and delicious food along the way. In addition to dissecting a egg and learning some great egg trivia, kids will learn how to make the perfect omelet and a yummy chicken dish to go along with it. To round out our chicken-egg menu we will also make a quick and easy dessert..
